鱼丸青菜汤，清清爽爽的，喝完胃里舒服

有时候晚上不想折腾，就想喝口热汤。鱼丸青菜汤是我家冰箱常备的救急菜，烧水、丢鱼丸、放青菜，十分钟就能喝上，清淡不腻，配米饭或者下面条都合适。鱼丸我一般买现成的，菜市场或者超市都有，选那种弹一点的，煮出来口感好。青菜我用小油菜或者菠菜，洗的时候多冲两遍，菜根那里容易藏泥。如果是菠菜，最好先焯一下水，去去草酸，小油菜就不用，直接掰开洗就行。

锅里加水，不用太多，两个人喝的话两碗水差不多。水开了先放几片姜，去腥提味，然后把鱼丸倒进去，中火煮到鱼丸浮起来，大概三四分钟。浮起来之后别急着放菜，撇一下表面的浮沫，汤会清亮一些。接着放青菜，小油菜煮一两分钟就软了，菠菜更快，烫个几十秒就行。加盐调味，我一般只放盐，偶尔滴两滴香油，不喜欢香油味的就不放。想鲜一点可以撒点白胡椒粉，暖乎乎的，冬天喝特别舒服。

有时候我还会加个鸡蛋，鱼丸煮浮起来之后，把火调小，打个鸡蛋进去，别搅，等蛋白凝固了再轻轻推几下，蛋花嫩嫩的，汤也更丰富。或者切点豆腐进去，鱼丸豆腐青菜一锅出，有荤有素，简单又顶饱。鱼丸本身有咸味，盐别放太多，先尝一口再加。青菜别煮太久，软塌塌的不好吃，保持一点脆劲儿，汤也清甜。
