被称为补气血之王的莲藕！打成细腻羹汤，秋燥脸色发黄的多喝它

　秋天一来，不少人就开始口干、皮肤发紧、脸上没精神，尤其是早上起床那会儿，嗓子像贴了层纸，喝水都不顶事。很多人第一反应是买补品、买饮料，花钱不少，效果还未必稳当。其实啊，老祖宗早就把答案放在咱家常菜里了，莲藕这东西，便宜、实在、耐吃，煮一煮、打一打，照样能把秋燥这股邪火压下去。

　　莲藕为什么适合秋天，得把话说透。秋天在传统饮食里主打一个润字，天气一干，人体津液消耗快，很多人嘴唇起皮、皮肤发紧、便秘、咽喉不舒服，都是常见表现。莲藕水分足，口感脆甜，熟了以后纤维变软，煮出来的汤羹就有一种温和的包裹感。中医常说莲藕生食偏凉，熟食偏温，这个差别很关键。生藕适合清热生津，熟藕更适合健脾养胃、安稳地补。秋冬拿它来做羹，路子是对的。

　　而且莲藕这食材，最适合咱普通家庭。菜市场里一买就是一大截，价格比补品亲民得多，洗干净、切两刀就能上手。很多家庭主妇主夫一看就明白，这不是那种需要专业厨艺的复杂菜，破壁机一响，家里热气就起来了。现在不少人早餐不是油条配豆浆，就是随手抓点饼干面包，顶饱是顶饱了，润燥这件事根本顾不上。莲藕羹这类热饮，正好把早餐从将就拉回到讲究。

　　莲藕雪梨润燥饮，走的是清润路线。莲藕配半个雪梨，打成细腻羹汤，嗓子干痒、秋燥咳嗽的时候，很多人就爱这口。雪梨本身水分高、口感清甜，和莲藕放一起，味道不冲，家里老人孩子都容易喝。这个搭配在民间也常见，秋天讲究润肺生津，梨子一直是老把式，搭上莲藕，清里带润，不会像一些凉饮那样一口下去浑身发寒。

　　莲藕花生养胃浆，更适合胃口差、消化弱的人。红皮花生、少许山药干和莲藕一起打，口感更厚一点，喝起来像一碗温柔版的糊糊。花生带点香，山药讲究一个稳，莲藕负责润，三样放在一起，方向很明确，就是把脾胃照顾好。现在很多人一到换季就吃不下，或者一吃就胀，问题常常不在吃得少，而在吃得乱。太冷的、太油的、太甜的轮番上，胃肯定闹脾气。

　　我家两个小子对这口也不排斥。小孩嘴挑，甜一点的愿意喝，太苦太冲的立马皱眉。莲藕羹正好，颜色白白净净，味道清清淡淡，喝着像米糊又比米糊更爽口。老人也能喝，孩子也能喝，一锅下去，家里几口人都能照顾到。做饭最怕的是一人一口味，最后锅里剩一堆。莲藕羹这类东西就不一样，接受度高，省得一家人吃饭还得分三套菜单。

　　还有人会问，喝这个到底图啥。图的就是顺手、便宜、舒服。秋冬季节，身体最怕的不是吃少了，而是吃得太乱，喝得太寒。莲藕羹把热量、润感、饱腹感都放在一碗里，端上桌就有家常味。破壁机一响，厨房里有点烟火气，屋里老人等着，小孩盼着，妻子在旁边搭把手，这种场景比外头买回来的任何花哨东西都踏实。

　　要说莲藕这东西，在中国饮食里地位也不低。湖北、江西、江苏一带，莲藕入菜特别多，炖汤、凉拌、炸藕盒，各有各的吃法。山东人也不含糊，虽然更爱口感厚实的面食和炖菜，但一到换季，做点润的东西，照样很有必要。老一辈人对莲藕熟得很，知道它不是啥稀罕货，却是实打实的好食材。便宜归便宜，管用才是硬道理。

　　秋天做饭，别老盯着那些看着高级、吃着累人的东西。莲藕羹这种家常做法，没门槛，没负担，热乎乎一碗下肚，嘴里有淡淡清甜，胃里也安稳。家里有老人小孩的，尤其可以常备莲藕。去菜市场顺手带两节，回家切了、打了，厨房里十几二十分钟就能热闹起来。山东人过日子讲究一个踏实，这一碗莲藕羹，就是踏踏实实把秋燥往下压的办法。
