大厨公开：宫保鸡丁像我这样做，酱汁是灵魂，鸡肉嫩滑不柴

每次下馆子，总会被那道红亮诱人、酸甜微辣的宫保鸡丁所折服。可自己在家一动手，要么鸡肉炒得像“橡皮筋”，要么味道总差那么点意思。别急，我特意跟做了几十年川菜的大厨讨教了“独门秘籍”。原来，只要调好那碗“灵魂酱汁”，掌握几个关键火候，你也能轻松做出让全家惊艳、完全不输饭店的正宗味道。今天，咱就把这道“国菜”的底细，给你扒个明明白白。

选对肉，这盘菜就成功了六成

很多朋友做宫保鸡丁，第一步就栽了跟头——错用了鸡胸肉。鸡胸肉脂肪少，家庭灶火又不够猛，稍不留神就炒得又柴又老，入口全是渣。大厨首选的，是鸡腿肉。

鸡腿肉带着点皮和脂肪，汁水足，口感天生就比鸡胸肉滑嫩好几个档次。买回来的鸡腿先去骨（可以请摊主帮忙），带皮切成1.2厘米左右见方的小丁，也就是俗称的“骰子丁”，大小均匀，成熟度才一致。

切好的鸡丁要好好“按摩”一下。加一丢丢盐、料酒、生抽抓出底味，再分次少量地打入清水，让肉丁把水“吃”进去，这是嫩滑的关键。最后加玉米淀粉抓匀上浆，封上一层食用油，既能防止下锅粘连，又能锁住水分。腌上个十来分钟，趁着这功夫，咱们来调那碗“灵魂酱汁”。

这碗“荔枝口”酱汁，是味道的定海神针

宫保鸡丁最正宗的味型，叫“糊辣荔枝味”。入口先是微微的酸，紧接着是回甘的甜，咸鲜打底，尾韵还带着花椒辣椒的焦香。这一切的奥秘，全在那碗提前兑好的碗芡里。

千万别学某些“野路子”教程，炒菜时手忙脚乱地加盐加糖。宫保鸡丁讲究的是猛火快炒，哪有时间让你一样样放调料？

记住大厨这个黄金配比：白糖和香醋的比例要接近1:1。具体到一盘的量，就是白糖16克、香醋14克，这是形成“荔枝味”的核心。再加入生抽12克提鲜，料酒6克去腥，几滴老抽上个色，最后加7克玉米淀粉和40克清水搅匀。这碗汁提前备好，炒菜时一浇，味道绝对错不了。这里要划个重点：正宗的宫保鸡丁，是不放豆瓣酱的，放了就成家常辣子鸡丁了。

爆炒三分钟，火候里的大学问

一切准备就绪，就该上锅爆炒了。这道菜从下锅到出锅，也就两三分钟的事儿，考验的是手速和火候。

先炸花生米。 冷锅冷油下花生米，小火慢炸，听到噼啪声，表皮微黄就赶紧捞出来晾凉，这是保证最后一步花生米酥脆的关键。

再煸糊辣香。 锅里留底油，先放花椒，再下干辣椒段，一定要用中小火。把辣椒慢慢煸炒到变成棕红色、微微卷曲，那股独特的焦糊香气“噌”地一下就出来了。这一步火候是成败关键，要是炒黑了，整道菜就发苦了。辣椒一出香，立马下姜片、蒜片爆香。

最后快炒收汁。 火开到最大，倒入腌好的鸡丁快速滑炒。看到鸡丁变色定型，还带一点点嫩红时，说明火候正好，这时候把切好的葱白段放进去。紧接着，把调好的碗芡再次搅匀（淀粉容易沉底），沿着锅边淋入。保持最大火，快速颠锅翻炒，让每一块鸡丁都均匀地裹上红亮透明的芡汁。汤汁收浓的瞬间，立刻关火，倒入炸好的花生米，快速翻拌五六下就马上出锅。
