炸完食物的剩油到底能不能用？大厨教你正确做法，别再白白倒掉了

每次在家炸完酥肉、炸完带鱼、炸完丸子，看着锅里那大半锅油，你是不是也犯过难？倒了吧，心疼，一桶油好几十块，炸一次就扔实在舍不得。留着吧，心里又打鼓，网上说反复用油会致癌，万一吃出问题来可不是省几十块钱能解决的。我问过一位干了二十多年后厨的老师傅，他笑了笑说：“能不能用，不是看别人怎么说，是看你手里的油到底变成啥样了。”今天咱们就把这事儿掰开了聊清楚。

一、油在锅里到底经历了什么？

咱们得先明白一件事：油不是被“炸”坏的，是被“反复加热”搞坏的。

食用油在高温下会发生氧化、水解、聚合反应，说白了就是油分子在高温里被拆散、重组，生成一堆新东西。其中最值得警惕的是“极性组分”，这个指标越高，说明油变得越糟。国家标准规定，煎炸用油的极性组分一旦超过27%，就必须废弃，不能再用于任何食品加工。

超过这个数意味着什么呢？意味着油里已经富集了苯并芘、丙烯酰胺、反式脂肪酸这些东西。苯并芘是世界卫生组织列明的I类致癌物，反式脂肪酸会推高坏胆固醇，增加心脑血管疾病的风险。有研究发现，反复高温使用7次的食用油，丙二醛含量可以增加30倍以上。

而且不光是产生有害物的问题。花生油原本含有超过85%的健康脂肪酸，但经过两小时煎炸后，这个比例可能骤降到只剩17%。维生素E在高温油炸后会有70%到90%被破坏掉。你留着的那锅油，营养价值其实已经大打折扣了。

二、你的油到底还能不能用？先看这四点

大厨的判断方法很朴素，不用仪器，就是用眼睛看、鼻子闻、手指摸。

看颜色。 如果油还是清亮的，只是比新油稍微深了一点点，问题不大。但如果油色发黑发褐，变得浑浊，底部有厚厚的沉淀，那就别犹豫了，直接倒掉。

闻气味。 正常的油即使炸过东西，也不应该有刺鼻的味道。如果你闻到哈喇味、酸味，或者那种说不清道不明的“油腻怪味”，说明油已经酸败了。

试黏度。 用筷子蘸一滴油，两个手指捻一下。新油是滑溜溜的，变质的油会明显发黏、挂手，甚至像胶水一样有拉丝感。

看泡沫。 下次加热这锅油的时候留意一下。如果油温还没到正常炒菜的温度，表面就开始冒大量细密的泡沫，而且泡沫不易消散，这就是油已经劣变的信号。

四个里面中了一个，就别心疼了，该扔就得扔。

三、能用的话，怎么处理才安全？

如果检查下来油的状态还行，那就可以进行“抢救性处理”。注意，这一步很关键，做不好等于白留。

第一步：趁热过滤。炸完东西关火后，趁油还是热的但不太烫手的时候，用细网漏勺或者纱布把油过滤一遍。这一步的目的是把食物残渣清掉，因为残渣留在油里会加速变质，下次加热时还会产生更多有害物质。

第二步：去除异味。炸过鱼的油有腥味，炸过肉的油有肉腥味。大厨的妙招是：炸完鱼之后，切几块茄子扔进去炸到金黄捞出来，茄子像海绵一样能把腥味吸走。炸过肉的油呢，丢一把葱段姜片进去小火慢炸到焦黄，油里就带上葱姜的香味了。

第三步：密封冷藏。过滤好的油放凉后，装进玻璃瓶里，盖紧盖子，放进冰箱冷藏。注意一定要用玻璃瓶，不要用塑料瓶，而且一定要密封避光。敞口放在灶台边上是最要命的做法，高温加接触空气，油变质的速度会快好几倍。

第四步：三天内用完。冷藏保存的剩油，最好在三天内吃完。不要觉得放冰箱就万事大吉了，剩油本身就是“熟油”，它的保质期跟新油完全不是一个概念。

四、剩油怎么用才不浪费？

记住一个核心原则：已经炸过一次的油，绝对不要再用来炸第二次。

那能用来干嘛呢？

用来和饺子馅、包子馅最合适。拌馅的温度不会超过100度，根本不会触发高温反应，剩油在这里能派上大用场。做扯面、拉面的时候在面团外面抹一层，也完全没问题。拌凉菜的时候，把剩油稍微加热一下，浇在凉菜上激出香味，效果不比香油差。

炒菜的时候也有技巧：先用少量新油炝锅，等主料下锅了，再沿着锅边淋一点剩油进去。这样剩油入锅时的温度不会太高，既利用了它，又避免了高温下的二次劣变。

第一个误区是“新旧油混着用”。有人觉得新油兑旧油能“稀释”有害物质，其实完全相反——旧油里的氧化产物会加速新油的变质，等于把好油也拖下水了。

第二个误区是“油看着还行就能继续炸”。很多人觉得油颜色没怎么变，就接着炸第二锅、第三锅。但感官判断并不靠谱，上海市市场监管局就通报过餐饮企业靠“看颜色、闻味道”决定换油，结果煎炸油极性组分超标被立案查处的案例。家里虽然没人来检查，但咱们自己的身体就是最好的检测仪，没必要拿健康去赌。
