一人食治愈晚餐：香辣牛肉丸焖面，简单入味超解馋

忙碌的日常里，最治愈人心的瞬间，莫过于结束疲惫后，为自己准备一份热气腾腾的一人食晚餐。不用繁琐工序，不用精致摆盘，一碗热乎乎、浓油赤酱的香辣牛肉丸焖面，就足以抚平一天的疲惫。筋道的面条吸满浓郁的香辣汤汁，Q弹紧实的牛肉丸咬开满口鲜香，荤素搭配、入味十足，简简单单的家常味道，就是独属于自己的小幸福，温暖又踏实。

这道香辣牛肉丸焖面是超百搭的家常快手菜，食材都是家里常备的种类，操作零难度，新手也能一次成功。准备食材无需复杂配比，一人份只需一把新鲜湿面条或者细挂面，八颗左右冷冻牛肉丸，再搭配蒜末、小米辣、葱花提味，调味只需要生抽、老抽、蚝油、少许白砂糖和辣椒油，喜欢清爽口感的还可以准备几颗青菜，配色好看又解腻。所有食材备好后，就可以开启简单的制作步骤，全程十几分钟就能出锅，省时又美味。制作前先处理食材，冷冻牛肉丸无需解冻，直接对半切花刀，这样焖煮的时候能充分吸收汤汁味道，吃起来更入味。锅中倒入少许食用油，油温六成热时，放入蒜末和小米辣小火炒出香味，切记不要炒糊，避免发苦影响整体口感。接着放入切好的牛肉丸，中小火慢慢翻炒，直至牛肉丸表面微微焦黄，锁住肉质的鲜香，这一步能让牛肉丸的口感更有嚼劲，香味也会更加浓郁。

随后开始调万能焖面酱汁，碗中加入两勺生抽提鲜，半勺老抽上色，一勺蚝油增香，少许白砂糖中和辣味、提鲜解腻，再根据自己的吃辣口味加入一勺辣椒油，最后倒入小半碗清水搅拌均匀，简单的酱汁就调配完成。将调好的酱汁倒入锅中，没过牛肉丸即可，开大火将汤汁煮沸，让牛肉丸充分吸收酱汁的咸香辣味，沸腾两分钟后，把准备好的湿面条均匀铺在牛肉丸上方，切记不要翻动面条。接下来转入焖煮环节，盖上锅盖转中小火焖煮五分钟，让面条慢慢吸收锅底的汤汁，熟透入味。等待的过程中可以清洗青菜，焖煮时间到后，打开锅盖，放入青菜，用筷子将面条轻轻翻拌均匀，让每一根面条都裹满浓稠的酱汁，同时让青菜受热断生。最后开大火收一下多余汤汁，待汤汁浓稠、紧紧挂在面条和牛肉丸上，关火撒上一把葱花点缀，香气瞬间扑面而来。
