寒露至，建议大家：少吃生姜和螃蟹，多吃8样，滋阴润燥身体棒

刚送走秋分的飒爽风，寒露就踩着晨露悄然而至——走在小区里能看见草坪上凝着细碎的白霜，风一吹，后颈都带着凉丝丝的秋燥劲儿。老辈人常说“寒露不吃姜，秋蟹不贪嘴”，这时候生姜性热，秋燥本就耗损津液，吃多了容易上火冒口疮；虽说九月团脐十月尖，但寒露后螃蟹性腺发育最盛，性寒的属性对脾胃弱的人太不友好，吃多了轻则腹胀腹泻，重则引发旧疾。与其贪这一口鲜，不如安排上8样应季润燥宝，做法简单还贴秋膘，吃完整个人都润乎乎的。

一、莴笋炒肉

食材：莴笋1根、猪肉250g、姜蒜、小米辣2个、葱花少许、生抽1勺、老抽半勺、盐少许、鸡精少许、食用油

做法：

1.猪肉切片；莴笋去皮切薄片；姜蒜切末，小米辣切圈备用。

2.锅中倒油烧热，下入莴笋片，中火煸炒至莴笋变软断生，盛出备用。

3.锅里留底油，爆香姜蒜末，下入肉片翻炒至完全变色。

4.把莴笋倒回锅中，加入小米辣、生抽、老抽、盐、鸡精，大火翻炒入味，出锅撒上葱花。

二、韭黄炒肉丝

食材： 韭黄、大蒜、泡椒、葱段、肉丝

腌肉调料： 生抽、盐、胡椒粉、米酒、淀粉

调料： 老抽、盐、鸡精、猪油

做法：

1、肉丝加腌肉调料抓匀腌制。

2、热锅下油，放一点猪油香味更浓，油温升高下入肉丝快速滑炒至变色。

3、放入大蒜、葱头，少许老抽上色，加入泡椒炒出香味。

4、先下韭黄秆翻炒一分钟，再倒入韭黄叶，放少许盐继续翻炒一分钟，加入葱段、鸡精，大火翻匀出锅。

三、爆炒腰花

所需食材：猪腰2个、青椒1个、红椒1个、洋葱半个、姜1块、蒜4瓣、料酒2勺、生抽2勺、老抽半勺、香醋1勺、白胡椒粉少许、淀粉1勺、盐适量、食用油适量。

步骤：

1. 猪腰先撕去表面薄膜，平刀从中间片开，露出白色腰臊。用刀仔细剔除腰臊，尤其深色筋膜要去净，这是去腥的关键，别舍不得下刀。
2. 处理好的猪腰先斜刀切出平行纹路，不要切断，再转角度直刀切成交叉花刀，最后切成宽条。切好后放入清水中，加少许料酒和姜片浸泡10分钟。
3. 泡好的腰花捞出沥干，加入料酒、白胡椒粉、少许盐和淀粉抓匀，腌制8分钟。淀粉能锁住水分，让腰花炒后更滑嫩，但不要裹得太厚。
4. 青红椒去籽切块，洋葱切菱形片，姜蒜切末。另取小碗，加入生抽、老抽、香醋、少许白糖、盐和半勺淀粉，再兑两勺清水，搅匀成碗汁备用。
5. 锅中多倒一点油，烧到七成热，下入腰花快速滑散，看到腰花卷曲变色立刻盛出，全程大约十几秒。油温要够，动作要快，避免出水变老。
6. 锅里留底油，下姜蒜末爆香，再放洋葱和青红椒大火翻炒，炒到洋葱边缘微透明、青红椒断生，香味明显但不软塌。
7. 倒回腰花，沿锅边淋入调好的碗汁，大火快速翻匀，让每一块腰花都裹上薄芡。汁水收亮后马上关火出锅，口感脆嫩，香气足。

四、沙姜葱油鸡

材料：半只鸡，姜片，香菜头，洋葱，沙姜和蒜，生抽，白糖

1.鸡加姜片，水开后上锅蒸25分钟左右，砍好块进行摆盘。

2.准备好香菜头，洋葱，沙姜以及大蒜。

3.锅里油烧热后把所有配料一起放入锅中炸至焦黄。

4.把生抽倒半碗进去，加入适量的白糖来提鲜，去掉里面的料渣再淋到鸡块上面就可以了。

五、玉米山药鸡汤

食材： 鸡半只、玉米1根、山药1段、红枣几颗、姜片、盐

做法：

1、鸡块冷水下锅焯水，捞出洗净。

2、将鸡块、姜片、红枣放入砂锅，加足量热水，大火烧开转小火炖40分钟。

3、玉米切段，山药去皮切段，放入锅中继续炖20分钟。

4、加盐调味即可。

六、板栗炖土鸡

食材

新鲜板栗250克、土鸡半只、生姜4片、葱段、生抽2勺、蚝油1勺、冰糖3颗、食盐少许、清水适量

详细制作过程

1. 土鸡清洗干净，剁成大小均匀的鸡块，冷水下锅，加入姜片、少许料酒，大火煮沸焯水，彻底撇干净表面血沫，煮2分钟后捞出，用温水冲洗掉杂质，沥干水分备用。
2. 板栗剥去外壳和内皮，清洗干净，避免残留绒毛；生姜切片、葱段切段备用。
3. 锅中放少许食用油，放入冰糖小火慢炒，炒至冰糖融化变成浅焦糖色，倒入鸡块快速翻炒，让每一块鸡肉均匀上色，增香提味。
4. 加入姜片、葱段翻炒出香味，放入生抽、蚝油翻炒均匀，激发食材鲜味，去除鸡肉腥味。
5. 倒入足量热水，完全没过食材，大火烧开后放入板栗，转小火盖上锅盖，焖煮30分钟。
6. 待鸡肉软烂、板栗软糯，开大火收浓汤汁，加入少许食盐调味，翻炒均匀即可关火出锅。

七、清炒紫甘蓝

食材：紫甘蓝半个、大蒜3瓣、少许盐、生抽、几滴香醋、食用油

制作步骤

1、紫甘蓝先切掉硬根，切成细丝，放入大碗，加少许盐抓匀静置5分钟，杀出水分，挤干。这一步可以去掉生涩味，口感更脆。

2、大蒜切成蒜片备用。

3、热锅放少量食用油，蒜片小火爆香，倒入紫甘蓝，大火快速翻炒1分半钟。

4、放少许生抽，滴几滴香醋，加适量盐，快速翻匀立刻关火，不要久炒，避免营养流失。

小贴士：大火快炒，断生即可。胃酸过多的人，醋少放一点。

八、红烧五花肉

准备食材：五花肉、生姜、大蒜、八角、桂皮、冰糖、生抽、老抽、料酒

做法步骤

1. 五花肉切块，冷水下锅，加姜片、料酒焯水，捞出洗净沥干水分。
2. 锅中不放油，下入五花肉小火煸炒，炒出多余油脂，肉质微微焦黄。
3. 放入姜蒜、八角、桂皮、冰糖，炒出香味，炒出糖色。
4. 淋入生抽、老抽翻炒均匀，让肉块均匀上色。
5. 加入没过食材的开水，大火烧开，转小火焖煮40分钟。
