国庆家宴必备的八道硬菜，不仅营养全面更能增强免疫力，建议收藏

国庆团圆的餐桌上，最暖的莫过于围着热气腾腾的家宴闲话家常。这8道硬菜兼顾老幼口味，把优质蛋白、维生素和膳食纤维搭配得恰到好处，吃着香还能悄悄帮全家筑牢免疫力屏障，做法详细零失败，新手也能一次成宴，建议提前收藏练手。

一、板栗焖排骨

食材：排骨、板栗、姜片、八角、生抽、老抽、蚝油、米酒、冰糖、盐

做法：

1. 锅里烧油，下姜片和排骨，中火炒干水汽。
2. 加生抽、老抽、八角、冰糖、米酒翻炒，炒到排骨上色、糖化出香味。
3. 倒开水没过排骨，撒点盐，小火焖20分钟。
4. 板栗剥好加进去，再放点蚝油，继续小火焖20分钟。
5. 大火收汁，收到汤汁黏糊油亮，尝一下咸淡，调味出锅。

二、南瓜百合小米羹汤

食材

老南瓜250g、干百合20g、小米60g、枸杞少许

做法

1. 干百合提前泡软；小米淘洗干净；南瓜去皮切小块。
2. 锅中加入清水，倒入小米大火煮开，转小火煮20分钟。
3. 放入南瓜块、泡好的百合，继续煮20分钟，煮到南瓜完全软烂。
4. 用勺子把部分南瓜压碎，汤羹变得浓稠。
5. 最后放入枸杞焖3分钟，不需要加糖，南瓜自带清甜。

三、鸡头米百合南瓜汤

所需食材：老南瓜500g，新鲜鸡头米100g，干兰州百合10g，清水适量。

制作步骤：

1、老南瓜去皮之后切成方块，百合冲洗干净备用。

2、把南瓜块跟百合一同放进锅里，加入足量的清水。

3、大火把锅里水煮开之后，转小火继续焖煮15分钟。

4、最后放入新鲜鸡头米，再煮1分钟关火即可，无需额外加糖。

四、豆腐焖木耳

准备食材

嫩豆腐一盒、干木耳一小把、青椒半个、大蒜、生姜、小葱

调味：生抽、蚝油、少许老抽、盐、白糖、鸡精、淀粉水

详细制作步骤

1. 干木耳提前用温水泡发，泡好之后剪去根部，反复清洗干净，撕成小朵。
2. 豆腐小心从盒中取出，切成大小一致的方块，切的时候动作轻一点，避免豆腐破碎。
3. 锅中烧水，水开之后放少许食盐，下入豆腐块焯水一分钟，捞出沥干水分，焯水之后豆腐不容易碎，还可以去掉豆腥味。
4. 木耳下锅焯水两分钟，捞出控干水分备用。
5. 青椒清洗干净切成小块，姜切丝，大蒜切片，小葱切葱花。
6. 锅中倒油烧热，下入姜蒜爆香。
7. 先倒入木耳，开中火翻炒两分钟，把木耳炒香。
8. 放入豆腐块，不要拿锅铲大力翻炒，握住锅柄轻轻晃动锅子，防止豆腐被搅碎。
9. 加一勺生抽、半勺蚝油、一点点老抽调色，少许白糖提鲜。
10. 倒入小半碗清水，盖上锅盖，中小火焖煮五分钟，让豆腐和木耳充分入味。
11. 放入青椒块，加适量盐和鸡精调味，晃动锅体翻匀。
12. 淋入调好的淀粉水，开大火把汤汁收至微微浓稠，撒上葱花出锅。

五、紫菜牛肉丸汤

食材：牛肉末、紫菜、生抽、红薯淀粉、黑胡椒、葱花、香醋、香油、松茸粉

做法：

1. 碗底放紫菜、葱花、盐、松茸粉、生抽、香醋、香油备用
2. 牛肉末加黑胡椒、盐、松茸粉、红薯淀粉，少量清水抓拌上劲，团成小丸子
3. 水烧开下牛肉丸，煮到丸子浮起熟透；连汤一起冲入备好汤底拌匀

六、红烧排骨炖板栗

准备：排骨一斤，新鲜板栗仁一小碗，姜片、八角、冰糖、生抽、老抽、蚝油、料酒各适量。

1. 排骨冷水下锅，放几片姜和一勺料酒，水开后撇去浮沫，捞出用温水冲洗干净。
2. 锅里放少量油，下几粒冰糖小火慢慢炒，等冰糖融化变成琥珀色、冒小泡的时候，把排骨倒进去快速翻炒，让每块排骨都裹上糖色。
3. 加姜片、两颗八角炒香，淋入生抽、少许老抽和一点蚝油，翻炒均匀。然后倒入滚烫的开水，水量没过排骨，大火烧开后转小火慢炖半小时。
4. 半小时后再放板栗仁，继续小火焖二十分钟，最后开大火把汤汁收浓就行。

七、葱爆牛肉

食材：牛里脊、大葱、生姜、生抽、蚝油、淀粉、少许白糖、食用油

做法：

1）将牛肉逆着纹路切成薄片，加入生抽、少许淀粉，再淋上一勺食用油，抓匀后腌制十分钟，这样能锁住牛肉里的水分。把大葱斜刀切成厚段备用。

2）把锅烧得滚烫，再倒入食用油，放入牛肉，用大火快速滑炒，炒至七八分熟时盛出，注意千万别炒太久，以免牛肉变老。

3）锅里留少许底油，放入姜片、大葱，煸出浓郁的葱香，接着把炒过的牛肉倒回锅里。

4）加入蚝油和一点点白糖提鲜，用大火快速翻拌十几秒，即可出锅。

八、韭菜炒鸡蛋

材料：韭菜250克、鸡蛋3个、油盐适量、

做法：

1.首先要把韭菜择去老叶，投洗干净，控干水分，韭菜和鸡蛋本身的味道就很鲜美了，所以不需要添加过多的调料，只用油盐就可以了

2.韭菜洗净后，先把韭菜梗的底部切去，因为韭菜的底部沾上了泥土，很难洗干净，把韭菜切成寸段，把韭菜梗和韭菜叶分开放，这一步很重要，这是一个炒韭菜的小窍门

3.把鸡蛋磕入碗内，用筷子将鸡蛋打散，抽打均匀

4.锅加油烧热，淋入鸡蛋液，摊开，待蛋液稍凝固，再翻炒成鸡蛋块，鸡蛋块的大小按自己的喜好炒好，鸡蛋要炒的嫩一些，不要炒老了，把鸡蛋块盛出待用

5.锅内再添加少许油烧热，下入韭菜梗翻炒，炒制颜色稍变深，这是炒韭菜的小窍门，先炒韭菜梗，后放韭菜叶再炒，这样，炒出的韭菜，叶和梗都同时炒熟了，就不会出现韭菜梗炒熟了，韭菜叶就炒过火了。
