10月8日寒露，这“寒露8宝”别忘了吃，尊重老传统顺时而食身体棒

10月8日秋分刚过便迎寒露，晨露凝寒、北风渐起，老辈常说“寒露补一补，冬天不受苦”，这流传百年的“寒露8宝”，全是应季而生的润燥温养食材，搭配8道家常快手菜，照着做就能跟着老传统顺时而食，从舌尖暖到周身。

一、小炒鸭丝

准备食材:鸭胸肉，青红线椒，蒜苔小米辣

制作方法:

第一步:把青红线椒，蒜苔，小米那切好备用，把鸭胸肉切成丝之后放入水中清洗干净。然后放入料酒，胡椒粉，盐抓拌均匀，最后放点淀粉。

第二步:把鸭熏肉用五成油温滑熟，捞出备用。锅中放油炒香葱姜和青红线椒，小米辣，洋葱最后放入鸭胸肉大火翻炒，加入盐，东古酱油，生抽，白糖即可。

二、红烧肉

食材：五花肉500克、葱姜、八角、桂皮、香叶、生抽、老抽、料酒、冰糖、盐

做法：

1、五花肉切块，冷水下锅加姜片、料酒焯水，撇去浮沫捞出洗净。

2、热锅倒油，下冰糖小火炒出糖色，放入五花肉翻炒上色。

3、加葱姜、八角、桂皮、香叶炒香。

4、加生抽、老抽、料酒，加足量热水没过五花肉。

5、大火烧开转小火炖1小时至软烂，加盐调味，大火收汁即可。

关键： 加热水炖，冷水会让肉质收缩变柴；小火慢炖，肥而不腻。

三、虾皮豆腐炖白菜

所需食材：嫩豆腐一块、虾皮一小把、大白菜半棵、生姜两片、小葱一根、食盐适量、白胡椒粉少许、香油几滴、清水适量。

步骤：

1. 嫩豆腐用清水轻轻冲洗一下，切成两厘米见方的小块，放入淡盐水中浸泡五分钟，这样既能去豆腥味，又能让豆腐在炖煮时不易碎。
2. 虾皮放入小碗中，加温水没过虾皮，浸泡三分钟，捞出沥干水分备用，泡虾皮的水沉淀后留上层清液待用。
3. 大白菜去掉外层老叶，取嫩叶部分用手撕成大片，菜帮部分用刀斜切成薄片，菜帮和菜叶分开放置。
4. 炒锅烧热，不放油，直接下虾皮小火慢焙，焙至虾皮微微发黄、香味飘出，盛出一半备用。
5. 锅中加少许底油，放入姜片爆香，先下白菜帮翻炒一分钟，再下白菜叶翻炒至变软。
6. 倒入泡虾皮的上层清液和适量热水，水量没过食材，大火烧开后放入豆腐块，转中小火炖煮八分钟。
7. 出锅前加食盐和白胡椒粉调味，撒上剩余焙香的虾皮和葱花，滴几滴香油即可关火。

四、番茄肉末饭

所需食材

猪肉末、番茄2个、蒜末、葱花

生抽、蚝油、盐、白糖、淀粉、食用油

详细制作步骤

1. 番茄顶部划十字，用开水烫一下，轻松撕掉外皮。
2. 去皮的番茄切成细小番茄丁，更容易炒出浓郁红汤。
3. 猪肉末放入碗中，加少许生抽、少许淀粉抓匀腌制五分钟。
4. 腌制后的肉末更嫩滑，炒制不易结块、不发柴。
5. 锅中烧油，下入蒜末爆香，倒入腌制好的肉末。
6. 中小火快速翻炒，把肉末炒散、炒至变色熟透。
7. 炒干肉末多余水汽，盛出备用，避免出水发腥。
8. 不用洗锅，锅底留底油，倒入番茄丁中小火翻炒。
9. 不停用锅铲按压翻炒，把番茄完全炒软、炒出沙、炒出红汤。
10. 加少许白糖中和酸味，提升整体鲜甜口感。
11. 倒入炒好的肉末，和番茄汤汁充分翻拌均匀。
12. 加一勺生抽、半勺蚝油、适量盐调味，翻炒入味。
13. 加少量清水，中小火焖煮两分钟，让味道充分融合。
14. 开大火收汁，煮至汤汁浓稠挂壁即可关火。
15. 连汤带肉浇在米饭上，撒上葱花，拌匀开吃。

五、口蘑牛肉滑蛋

食材： 牛肉、口蘑、鸡蛋

做法：

1.牛肉切薄片，加少许黑胡椒粉、半勺蚝油、1勺淀粉、1勺清水，抓拌至粘稠，再倒入少许油封水分，腌制10-15分钟；

2.准备蒜末和口蘑切片备用；

3.碗中打入鸡蛋，加葱花、少许盐和黑胡椒，搅拌均匀备用；

4.锅里喷少许油，中小火热锅，下牛肉片快速滑炒至变色立刻盛出；

5.留底油，热油中小火炒香蒜末，倒入口蘑炒出变软鲜汁，再倒回牛肉大火翻炒均匀；

6.关小火将食材在锅底均匀铺开均匀倒入鸡蛋液；

7.中小火慢煎大部分蛋液凝固即可出锅。

六、芹菜炒牛肉

食材：

牛里脊、芹菜、红椒、蒜末、姜丝、生抽、蚝油、淀粉、盐、油 适量

步骤：

1️⃣牛肉逆着纹路切薄片，加生抽、蚝油、淀粉和少许油抓匀，腌制10分钟。

2️⃣芹菜洗净切段，红椒去籽切丝。

3️⃣热锅倒油，油温升高后下牛肉片，大火快速滑炒至变色，盛出备用。

4️⃣锅里留底油，下蒜末、姜丝爆香，倒入芹菜段和红椒丝，大火翻炒1分钟。

5️⃣倒回牛肉片，加少许盐和生抽，翻炒均匀即可出锅。

七、白萝卜炖排骨

所需食材：猪肋排五百克、白萝卜一根、生姜四片、大葱一段、料酒两勺、白胡椒粉少许、盐适量、枸杞一小撮、香菜少许。

步骤：

1. 排骨斩成小段，放入清水中浸泡半小时，中途换两次水，尽量泡出骨肉中的血水，这是去除腥味的关键一步。
2. 排骨冷水下锅，加入两片生姜和一勺料酒，大火煮开后撇去浮沫，继续煮两分钟，捞出用温水冲洗干净，沥干备用。
3. 白萝卜去皮，切成滚刀块。切好的萝卜块不要过早放入锅中，以免炖煮过久失去形状和口感，可在排骨炖至半熟时再切。
4. 将焯好的排骨放入砂锅，加入足量热水，放入剩余姜片和葱段，淋入一勺料酒。大火烧开后转小火慢炖四十分钟。
5. 四十分钟后，拣出葱段和姜片，放入切好的白萝卜块，继续小火炖煮二十分钟，直到萝卜变得半透明、用筷子能轻松穿透。
6. 调入适量盐和少许白胡椒粉，搅拌均匀，再炖五分钟让味道充分渗入。白胡椒粉能去腥增香，同时带来微微暖意。
7. 关火前撒入洗净的枸杞和香菜碎，盖上盖子焖一分钟即可上桌。汤色清亮，萝卜清甜，排骨软烂脱骨。

八、蓝莓山药泥

食材

铁棍山药1根，蓝莓酱2勺，蜂蜜少许，白糖2勺，盐一小撮。

做法

1. 山药戴手套去皮洗净，切成小段，水开后放入蒸锅，加1勺白醋，盖盖大火蒸20分钟，蒸至软烂取出放凉。
2. 蒸好的山药放入料理机，加2勺白糖、一点点盐，打成细腻顺滑的山药泥，放入冰箱冷藏1小时定型。
3. 碗中放2勺蓝莓酱，淋入少许蜂蜜，搅拌成浓稠酸奶状的蓝莓酱汁。
