香辣开胃双椒鸡丁，家常下饭妥妥干饭神器

要说夏季最开胃的家常快手菜，双椒鸡丁绝对是首选。无需复杂的食材和繁琐的工序，简简单单的鸡肉搭配青红双椒，大火爆炒出锅，香气瞬间弥漫全屋。炒好的双椒鸡丁色泽鲜亮诱人，金黄的鸡丁紧实嫩滑、丝丝入味，青红椒脆爽多汁，裹满浓郁的香辣酱汁，入口鲜辣过瘾、咸香十足。清爽的辣味不燥不腻，超级开胃，每一口都特别下饭，妥妥的费米饭神菜，不管是日常三餐还是家常小聚，端上桌都能瞬间盘活胃口，老少都爱吃。

制作家常双椒鸡丁，食材简单家常，新手也能零失败。主料优选新鲜鸡腿肉，相比鸡胸肉，鸡腿肉肥瘦适中、肉质更嫩，爆炒后鲜嫩不柴、汁水充足，口感远超纯瘦肉。再准备青椒、小米辣搭配配色增味，少许葱姜蒜作为基础配料，家常调料就能做出饭店级的味道。先将鸡腿肉去除骨头和多余油脂，切成大小均匀的鸡丁，大小适中更易熟透入味，吃起来也更过瘾。切好的鸡丁需要提前腌制，这是肉质嫩滑入味的关键。鸡丁放入碗中，加入少许生抽、蚝油、料酒和少许食盐，再撒上一点点胡椒粉，抓拌均匀充分入味，最后加入一勺淀粉和少许食用油，再次抓匀锁住水分，静置腌制十分钟。这样腌制出来的鸡丁，炒制后紧实弹牙，不会发干发柴，鲜嫩度直接拉满。趁着腌肉的时间，将青椒、小米辣切成小块，葱姜蒜切好备用，简单备菜就能开启烹饪。起锅倒入适量食用油，油温六成热时倒入腌制好的鸡丁，中小火慢慢滑炒。先不要着急翻动，静置片刻让鸡丁底部定型，一面微黄后再翻面翻炒，将鸡丁炒至表面微微焦黄、完全变色后，先盛出备用。这一步不要炒太久，断生上色即可，避免过度炒制导致肉质变老，影响鲜嫩口感。

锅中留少许底油，放入葱姜蒜、小米辣小火翻炒出香味，炒出浓郁的香辣底味后，倒入切好的青椒块，开大火快速翻炒片刻，将青椒炒至断生，保留清脆爽口的口感。接着把炒好的鸡丁倒回锅中，和配菜混合翻炒均匀，根据自己的口味加入少许生抽、少许白糖提鲜，快速翻拌让每一块鸡丁和辣椒都均匀裹上薄薄的酱汁。全程大火快炒，激发出食材的香味，翻炒一分钟即可关火出锅，最大程度保留食材的鲜香和脆嫩口感。成品出锅的双椒鸡丁红绿相间、色泽诱人，满满的烟火气扑面而来。鸡丁鲜嫩紧实，吸饱了香辣酱汁，每一口都鲜香浓郁，青红椒脆爽清甜，中和了肉类的厚重感，鲜辣适口、香气十足。微微的辣味刺激味蕾，超级解腻开胃，越吃越想吃，浓郁的酱汁拌上白米饭，一口米饭一口鸡丁，根本停不下来，妥妥的妥妥的费米饭家常菜。
