第一道：柠檬手撕鸡，酸爽激活味蕾第一弹

天热吃鸡，最好别炖。试试这道柠檬手撕鸡，它绝对是夏日荤菜里的“小清新”。

这道菜的精髓在于“手撕”和“柠檬”。鸡胸肉或鸡腿肉煮熟后，别用刀切，一定要用手顺着纹理撕成条。刀切会破坏纤维，手撕的断面不规则，能挂住更多料汁。柠檬不要切片扔进去就完事，要挤出汁水，再连皮带肉切碎，那清香的酸味才能彻底释放出来。再配上小米辣、蒜末、香菜，最后淋上热油“滋啦”一声激发出香味。吃起来鸡肉嫩滑，酸辣中带着果香，一口下去，沉闷的胃口瞬间就被打开了。

第二道：拍黄瓜变奏曲——刀拍黄瓜拌木耳

拍黄瓜谁都会，但加上木耳，口感就升了一级。

拍黄瓜的秘诀在“拍”不在“切”。用刀背把黄瓜拍裂，让它自然裂开，这样拌出来的黄瓜更入味，而且芯子是脆的。木耳提前泡发，焯水后过凉水，保持它的脆韧感。调味上，除了常规的蒜醋，我建议你加一勺油泼辣子和一点点白糖。糖不是为了让菜变甜，而是提鲜，中和醋的尖酸，让酸味变得更柔和醇厚。这道菜口感一脆一软，酸辣开胃，成本不到五块钱，却是最快光盘的一道。

第三道：皮蛋豆腐，永不落幕的经典

这道菜看似简单，但很多人做出来要么有腥味，要么不入味。

首先，皮蛋要选溏心的，切的时候刀上沾点水，蛋黄就不会粘刀。豆腐我建议用内酯豆腐，口感像布丁一样嫩滑。关键一步是：豆腐切块后，用开水轻轻烫一下，能有效去除豆腥味，再放进冰箱冷藏十分钟。浇汁是灵魂：姜末、蒜末、生抽、香醋、少许香油，喜欢吃辣的再来点辣椒圈。把调好的汁淋上去，皮蛋的Q弹、豆腐的冰爽、料汁的鲜辣在嘴里融合，那味道，绝了！

第四道：凉拌藕片，脆爽党的终极福音

这道菜要想好吃，就两个字：脆、白。

藕切片后，一定要马上放进加了白醋的水里泡着，防止氧化变黑。焯水时，水开后下藕片，煮个一分钟左右就捞出，立刻冲凉水或者冰水，这是保持爽脆的“黄金法则”。调味走清爽路线，只放白醋、白糖、少许盐和干辣椒段。最后烧一勺热油，浇在干辣椒上，刺啦一声，辣椒的焦香和藕片的清甜完美结合。吃起来嘎嘣脆，酸甜微辣，解腻效果一流。

第五道：番茄话梅小排（冷吃版）

谁说开胃菜只能素？这道菜是肉菜里的“异类”，冷吃比热吃更香。
