宁可不吃肉，也要多给孩子吃它，三两下炒一盘，益智又长个

菌类是个庞大的家族，在我们周围，它们无处不在。从表面上看，菌类和植物的生长方式比较相似，但植物是通过光合作用从阳光中汲取能量，而菌类没有这种能力，所以它们不属于植物。显然它们也不是动物，它们是介于植物性食物和动物性食物之间的一种特殊存在。已知的菌类大约有十万余种，而其中的食用菌也有300余种，最常出现在人们餐桌上的有：平菇、香菇、金针菇、木耳、口蘑、白玉菇等。

菌类因为它丰富的营养价值、鲜嫩的口感和特殊的香味而受到人们的欢迎，我家也不例外。菌类一直是我家餐桌上的常客，各种菌类换着花样来烹饪，百吃不厌。甚至还会把几种菌类放在一起做成汤或者炒上一盘，味道也异常鲜美。我家最常做的是这个菜，几种菌菇放一起炒一下，也没有具体的名字，被我们叫做“菌菇大杂烩”。菜里没有肉，吃起来却比肉还香。三下两下就能炒一盘，益智又长个。

香菇被誉为“菇中皇后”，含有丰富的氨基酸、矿物质以及微量元素。香菇中的精氨酸和赖氨酸的含量很高，常吃可健体益智，提高记忆力。黑木耳中含有丰富的蛋白质、维生素和矿物资，其中铁元素含量极高，有补血益气的功效。白玉菇又叫白雪菇，是一种珍稀的食用菌。白玉菇的口感更为优越，菇体脆嫩鲜滑，清甜可口，是极具品味的美味佳肴。这几种食材放在一起，味道更加鲜美。

香菇200g，白玉菇200g，黑木耳50g，小葱1棵，生姜3片，豆瓣酱1勺，食盐半勺，生抽1勺，鸡精半勺。

1、黑木耳温水泡发后，切成细丝。香菇洗净后去蒂，切厚皮。白玉菇洗净从中间切一刀备用。

2、炒锅中加少量底油，先加入葱段、姜片炒出香味后，加入一勺豆瓣酱小火炒出红油。

3、先把切好的香菇下锅小火翻炒至香菇稍微变软即可，怕炒糊的话可以加一勺清水。
