北方人的冬季餐桌，买茄子后九成做这道菜，鲜香下饭，简单易学

这几天花儿就忙碌着给家人买年货，发现今年这猪肉和菜价真是很平稳。已经是正月十五了，物美超市卖的猪后腿才8.98元一斤，而像茄子、豆角、蒜薹等蔬菜，价格也不贵。记得去年临近春节，尖椒都十五元一斤了，而现在尖椒才4.98元。

蔬菜价格平稳，今年我家吃白菜的机会貌似都少了，家人都是茄子控，周末家附近的超市，鲜嫩的茄子特价2.99元一斤，索性就多买了一些，大部分是做了炸茄盒，等凉透后放入保鲜袋，冷冻保存，留下三四根茄子做家人都爱吃的茄子小炒。

时间富裕的时候，可以多切些葱姜蒜末，做好鱼香汁，做鱼香茄子，开胃又下饭；最家常的则是将茄子、豆角、土豆等炸熟，再放入蒜片和调味汁，做出地三鲜。这种做法咸香可口，百吃不腻。

我这次做的时候，发现冰箱里还剩余2根尖椒，放了有段时间了，就用尖椒段代替土豆块，清脆微辣的尖椒让这道茄子小炒，口感更清爽，非常下饭。

【茄子小炒】

食材准备：

茄子一根

豆角300克

尖椒2根

辣椒段适量、蒜3瓣

玉米淀粉适量

食用油、生抽、蚝油、盐、清水

制作步骤：

1、茄子一根，洗净后表面用厨房用纸擦干，撒上适量玉米淀粉。

用手充分抓匀，这里玉米淀粉不用放太多，薄薄一层即可。

2、300克的豆角择细干净，切段备用；2个尖椒去籽去梗切段；用2勺生抽、一勺蚝油、少许盐和适量清水搅拌，做成调味汁备用。

3、炒锅内放入适量食用油，不用等油烧热，直接放入豆角，保持中火炸。

炸豆角不能急，一定炸熟炸透。我炸豆角，用一个笊篱翻炒，等出现一根豆角炸的表皮起皱，出现焦色，就要勤翻炒，有点炒锅边缘的还比较硬的豆角就放中心炒。

因为咱们在家做，不可能像饭店那样，放入半锅油让豆角在里面游泳，自己做油放的少，就要多翻炒，让豆角均匀炸熟。

4、豆角盛出，接着炸茄块，炸软微焦后就可以了。

5、接着放入蒜片和干辣椒，来少许料酒爆香。

6、接着放入炸好的豆角，再淋入备好的调味汁，这里就全程保持大火了，快速翻炒。

7、一分钟后放入尖椒段，再炒个一分钟，即可关火出锅了。

8、装盘开饭，只要是茄子做的菜肴，就是这么香，大家赶紧来试试喽~~~~
