做排骨，这一步千万别偷懒！难怪你做出来又腥又柴

很多人觉得焯水麻烦，或者觉得焯水会把肉的鲜味煮没了，干脆跳过。结果呢？做出来的排骨要么腥味重，要么肉质发柴，白白糟蹋了一块好肉。

今天我就跟大家好好聊聊：排骨为什么要焯水？怎么焯水才对？ 把这步搞明白，你做出来的排骨绝对上一个台阶。

不焯水，排骨会有啥问题？

先说说排骨那股“怪味”到底从哪来的。

排骨里面有血水，血水里含有血红蛋白和杂质。如果你不焯水直接炖，这些血水就会留在肉里和汤里，加热之后产生腥味和浮沫。这就是为什么有人炖出来的排骨汤浑浊不清、味道不正的原因。

另外，排骨表面还有一些油脂和脏东西，光靠冲洗是洗不干净的。焯水能把这些东西逼出来，相当于给排骨做了一次“深度清洁”。

所以，焯水不是为了“煮熟”，而是为了去腥、去血水、让肉质更干净。

焯水≠随便煮一下

但是！焯水也不是把排骨扔进开水里煮几分钟那么简单。方法不对，照样白搭。

最常见的错误有两种：

第一种：冷水下锅还是热水下锅？

很多人搞不清楚。正确的答案是——冷水下锅。

如果你把排骨直接丢进滚开的水里，高温会让排骨表面的蛋白质瞬间凝固，里面的血水和杂质就被锁住了，根本出不来。这样焯水等于白做。

正确做法：排骨洗净后放入锅中，加入冷水，水量要没过排骨。然后开火慢慢加热，随着水温升高，血水和杂质会慢慢被逼出来，形成一层灰色的浮沫。

第二种：焯水多久？

一般来说，水烧开后继续煮2到3分钟就够了。看到浮沫基本不再增多，就可以关火了。

时间太短，血水没排干净；时间太长，排骨的鲜味和营养流失太多，肉质也会变老。

完整的焯水流程，照着做就行

好了，我把标准流程给你总结一下，下次做排骨照着来：

第一步：清洗

排骨买回来后先用清水浸泡20到30分钟，中途换两次水，把表面的血水泡出来一部分。

第二步：冷水下锅

把泡好的排骨放入锅中，加入足量冷水，放入几片生姜、一段大葱、一勺料酒。这三样是去腥三件套，缺一不可。

第三步：大火烧开，撇浮沫

开大火烧水，水快开的时候你会看到水面浮起一层灰色的泡沫。用勺子把这些浮沫撇干净。这个过程别嫌烦，浮沫撇得越干净，后面做出来的排骨越清爽。

第四步：捞出冲洗

水开后煮2到3分钟，关火。把排骨捞出来，用温水冲洗干净表面的残留浮沫。注意，别用冷水冲！热排骨遇冷会收缩，肉质变硬。

第五步：正式开始烹饪

焯好水的排骨就可以用来红烧、炖汤、糖醋、清蒸了。这时候你再做，保证没有腥味，肉质也更嫩。

不同做法，焯水也有区别
