用料:五花肉 甜面酱 豆瓣酱 青红椒 蒜苗 豆豉 大蒜 姜片 葱 醋 料酒 白糖

五花肉锅中烧皮,刀刮去除杂质

葱姜料酒,大火烧开转中火20分钟左右

切配菜,蒜杆,蒜叶,蒜片,青红椒切小段

热锅冷油,少油下锅,中火煸肉出肥油(嫌多可捞出来一些),肉边打卷 放蒜片简单煸炒,加豆瓣酱(先用锅里油炒一下)给肉均匀上色,加豆豉,甜面酱,煸炒片刻 锅边烹入料酒,再放青红椒,青蒜杆炒熟,加一点白糖,锅边淋生抽,大火翻炒,最后下蒜叶炒几下,淋锅边醋 出锅

翻车点:①肉不可煸炒太久,后续炒菜的时完全够用,否则肉质偏硬 ②煸炒肉的油不用舀走太多,若还是油多则出菜时再舀也可③豆瓣酱、甜面酱不要放太多,否则又咸又黑
