食材:草鱼一条,葱姜蒜,青红辣椒,料酒
做法:1️⃣草鱼切块加葱姜,盐,胡椒粉,料酒拌匀腌制30分钟,再放一勺淀粉拌匀,锅中倒入平时炒菜多一点油,油温六成依次下入锅炸(一定不要着急翻面,待定型再翻另一面炸)炸至两面金黄盛出
2️⃣锅中留底油,放葱姜爆香,加一勺豆瓣酱,一勺辣椒面炒出红油,倒入鱼块炒匀,加入半碗清水,加一勺生抽,半勺老抽,一勺酒糟翻炒均匀后1分钟,起锅放点青红辣椒碎,少许鸡精,葱段炒匀装盘,超级香辣鱼块,下酒下饭菜
