第二道:镬气十足的黄瓜炒肉
猪里脊肉洗净擦干,切成薄片。肉片加半勺料酒,1勺生抽,半勺淀粉,抓匀,腌个10分钟。
2个黄瓜洗净,斜刀切成薄薄的片。锅烧热,放1勺猪油化开。
锅中下腌好的肉片,快速滑炒到变色,立刻盛出备用。别炒老!
锅里留底油,下蒜片、姜丝,小火爆出香味。转大火!倒入黄瓜片,快速翻炒约1分钟,炒到黄瓜片边缘有点变透,但还是坚挺的状态。
炒好的肉片倒回锅里。加蚝油!快速翻炒均匀。尝尝咸淡,根据个人口味,补一点点盐。撒上葱花,关火!搞定!
