接着把鸡宰杀治净,斩去爪尖,对半切开,去除胸腔内的杂物,清洗干净,然后同样在鸡肉表面也划几刀。第二步,把鱼和鸡摆放在盘中,在上面铺上几片生姜,淋入适量料酒去腥,然后往锅里倒入足量清水,放入鱼鸡大火烧开,撇去浮沫,转中小火慢炖一个小时左右。
第三步,取一张新鲜的荷叶,将其洗净并烫洗干净,沥干水分备用。一个小时后,鱼鸡已经炖得非常软烂了,这时候我们就可以起锅装盘了。然后把烫洗好的荷叶铺在盘底,把鱼鸡连汤带汁一起倒扣上去,这样可以让荷叶吸收更多的香味。
