在盆中放入400克面粉,加入两克的食用盐,搅拌均匀,接着倒入280克50度左右的温水,边倒边搅,搅成大的面絮状后,下手揉成光滑的面团,因为这个面团偏软,可以在手上戴上一次性手套,或者在手上沾一点清水去揉搓,这样以免粘手,给它移交到案板上,揉搓3~4分钟,最后揉至表面特别光滑,给它搓成长条,再给它分成大小均等的4个小剂子,之后再将每个小剂子揉至表面光滑,放入大碗中,在表面喷上一点食用油涂抹均匀,盖上保鲜膜放着醒面20分钟。
利用这期间呢,我们来调一点油酥,在小碗中加入三勺的面粉,少许的十三香,然后加入一点食用盐,倒入烧热的油给它炸一下,激发它的香味,最后搅拌均匀,成稀一点的状态就可以。
时间到后,这个面团已经醒好,放到案板上给它按一按,然后擀成大概一元硬币左右厚度的圆饼,在表面涂上调好的油酥,边部留有一块不要去涂抹油酥,之后再给它一半的地方切上一刀,转圈将它卷起来,最后成一个锥形状,大头边部和堵头给它捏紧,不要让它留有缝隙,这样烙的饼不会漏气,做好以后层次就会更好,然后大头朝下给它摁扁,盖上保鲜袋再松弛10分钟。
时间到后,两面翻着将它擀薄,最后擀成一个大一点的圆饼,平底锅中喷入一点食用油,油热以后放入饼坯,全程用中大火,在饼皮表面涂抹一点食用油,这样可以锁住饼皮中的水分,烙至表面定型以后翻个,再烙一下另一面,最后烙至这个饼完全鼓大包,两面金黄说明已经熟好出锅。这样做好的油饼,特别的柔软又多层,就算凉了也不会变硬,非常的好吃。http://www.nxwdp.cn/voddetail/92875.html
