很多人说猪肚很难做,其实很简单。首先把猪肚洗干净,切几片生姜,放猪肚里面搓一搓,然后用清水冲洗干净。再把猪肚翻过来,用食盐或者是面粉反复揉搓,直到没有白沫为止。然后切成条状备用。
接着准备一个砂锅,放入适量的水烧开,把猪肚放进去焯水去腥,期间要多翻动一下,这样受热更均匀,煮至变色即可捞出,沥干水分备用。
接下来处理配料,淮山、党参、红枣清洗干净后备用。这里要注意一点,一定要提前泡发枸杞。

猪肚一定要选择新鲜的,这样才能保证口感。另外,在挑选猪肚的时候,可以看看表面是否光滑,如果有很多褶皱,说明不够新鲜,因为新鲜的猪肚上面都是褶皱的。闻一闻有没有异味,好的猪肚是没有异味的。看一下颜色是不是偏黄,如果是白色的,那就是死猪肚。还可以用手摸一下,太软或者太硬都不是好的猪肚,只有这种软硬适中的才是好猪肚。
