模具尺寸:加高6寸活底。
用料
白砂糖
100克
温水
280克
耐高糖酵母
4克
木薯(淀)粉
150克
高筋粉
150克
可可粉
15克
葵花籽油
30克
泡打粉
4克
新中式糕点-可可马拉糕蒸糕发糕的做法
- 白砂糖+温水+酵母搅拌融化;
- 筛入木薯粉和高筋粉;
- 用蛋抽拌至无干粉后,再用刮刀压至无颗粒;
- 密封放入烤箱用发酵功能,发至2倍大;
- 在此过程中,把可可粉和葵花籽油加一起搅拌融解成糊;
- 取出面糊,加入泡打粉和可可糊;
- 用蛋糕搅拌至完荃消泡;

- 模具无需fang粘处理,直接倒入,静置10分钟;
- 烧开一锅水,并在模具上盖上锡纸;
- 把模具放进锅中,盖上锅盖,中小火蒸45分钟;
- 出锅无需倒扣,晾凉后倒扣过来就可以脱模了。
