【清炒豌豆苗】 所需食材：豌豆苗、鸡蛋、红椒、盐、蚝油、食用油、鸡精

具体做法：1、挑叶片舒展像小荷叶的，茎秆掐着脆生生的，带两片嫩叶的最水灵。遇到茎部发红别犹豫，那是阳光吻过的痕迹，更清甜。

洗菜小技巧：接盆清水撒点盐，像给豌豆苗泡温泉，转两圈泥沙就沉底了。捞出时记得甩三下，别让多余水分抢了锅气。

2、红椒竖着剖开，用刀尖“唰唰”刮掉白筋，切丝改丁随意。悄悄说：留几根红椒丝最后撒盘里，颜值翻倍！鸡蛋打散时加3滴水（炒出来更嫩），筷子“嘚嘚嘚”搅30下，起小泡泡才算合格！

3、热锅倒1勺油，转圈让锅壁也沾油。油微微冒烟时关火！倒蛋液，用余温把鸡蛋烘成云朵状，铲碎立马出锅（嫩到能掐出水！）

4、重新开火，2勺油烧到筷子尖冒小泡。先扔红椒丝“滋啦”爆香5秒，立刻倒豌豆苗！左手颠锅右手铲，全程大火猛攻！

5、看叶子塌下去立刻撒盐、蚝油，把炒好的鸡蛋回锅。关火！用余温翻两下，鸡精这时候撒（早放会苦！）
