秋天柿子红透天！脆柿和软柿到底怎么选？弄懂再买不吃亏

秋天逛水果摊，最让我挪不开眼的，就是那一堆堆橙红透亮的柿子了。每年这个时候我都要买上好几斤，但身边总有朋友发来灵魂拷问：“到底买软柿子还是脆柿子？为啥我买的柿子又涩又难吃？”说实话，柿子这个水果看着朴实，但门道真不少。今天咱们就一次性把柿子掰开了揉碎了聊清楚，从脆柿和软柿的区别，到怎么挑、怎么吃，全给你讲明白，看完保证你买柿子再也不踩雷。

脆柿和软柿，到底差在哪儿？

这两种柿子最根本的区别，其实藏在“脱涩”这件事上。简单来说，脆柿是“自带脱涩功能”的甜柿品种，果实在树上就自然完成了脱涩，摘下来削皮直接啃，清甜不涩，口感像苹果一样爽脆。而软柿属于涩柿，采摘后需要人工脱涩或者自然放置软化才能吃，完全成熟后果肉变得柔软多汁，甜度飙升，适合吸着吃或者做成甜品。

从外形上也能一眼分辨出来。脆柿长得偏方形，像个小灯笼，表皮光滑紧实，摸上去硬邦邦的，表面有一层天然果粉，那是新鲜度的标志。软柿则圆润饱满，磨盘柿底部有凹陷像磨盘，火晶柿个头小巧色泽红亮，捏一下软乎乎的，像装了水的气球。

营养方面，两者各有千秋。脆柿在维生素C和膳食纤维上稍占优势，每100克含维生素C约70毫克，而软柿的糖度更高，吃起来更甜，单宁含量也相对高一些，必须彻底脱涩才能放心吃。

至于吃法，那真是各有各的精彩。脆柿削皮切块直接吃最过瘾，咬一口“咔嚓”作响，清甜汁水在嘴里炸开，拿来拌沙拉、炒菜都特别出彩。我自己就试过把脆柿切片配芝麻菜和核桃仁，淋上橄榄油和苹果醋，酸甜脆爽，比普通水果沙拉惊艳太多。软柿的吃法就更花样百出了——撕开皮用勺子挖着吃、插吸管直接吸、拌酸奶、打成果泥，甚至还能做成软柿拿铁。韩国人夏天就爱把熟透的软柿冷藏后去皮，和牛奶一起打成冰饮，甜滑绵密，比奶茶还过瘾。

挑选柿子，记住这几个要点

挑柿子这事儿，关键是看你打算啥时候吃。想当天就吃的话，软柿要选表皮橙红、整体同等柔软的，有硬有软说明还没熟透。如果想放几天再吃，那就挑手感坚实、颜色均匀的，硬着买回家慢慢催熟最保险。

不管选哪种，有几个通用的判断标准。一看颜色，饱满的橙红色或金红色最好，颜色偏青说明还没熟。二看表皮，光滑紧实、没有斑痕裂口的是好果子，表面带点柿斑是自然现象不用怕，但大面积黑斑或软烂处就别买了。三看果粉，表皮有均匀白霜的说明新鲜，白霜没了可能放得比较久了。

买到涩柿子别慌，几招搞定

万一买回来的柿子涩得张不开嘴，千万别扔。最简单的方法就是把柿子和苹果或香蕉一起放进塑料袋，扎紧口子，室温放一两天就行。苹果和香蕉释放的乙烯气体能大大加速柿子脱涩成熟。如果想保持脆爽口感又想脱涩，可以试试温水法，把柿子泡在40到50度的温水里大约一天，涩味就没了，果肉还是脆的。不过水温千万别超过50度，不然果肉会变软甚至烂掉。
