暖锅鲜醇，一口入魂的酸菜滑肉煲

寒意渐起的时候，最动人的莫过于一锅咕嘟冒泡的砂锅菜。酸菜滑肉煲便是冬日餐桌的绝佳选择，砂锅里酸香浓郁，配菜清爽，最惊艳的当属薄嫩滑肉，裹着一层晶莹粉浆，入口软嫩不柴。连汤带肉舀一勺送入口中，醇厚的酸香在舌尖散开，暖意顺着喉咙淌进胃里，驱散周身寒凉，这一锅朴实家常的煲菜，既有开胃的滋味，又有抚慰人心的烟火力量。

备好食材，250克里脊肉、200克酸菜，搭配金针菇、黄豆芽、豆皮，辅以葱姜蒜末、小米辣，腌肉料与红薯淀粉是肉片滑嫩的关键。里脊肉切薄片，酸菜切成细丝，豆皮切细条，金针菇和黄豆芽清洗干净，葱姜蒜、小米辣切碎备用。先腌制肉片，在肉片中加入米酒、生抽、少许盐与白胡椒粉抓匀，静置腌上15分钟，充分去除肉腥，给肉片打好底味。

想要肉片入口即滑，调粉浆是核心。取50克红薯淀粉，少量多次加入40克温水，搅拌成质地厚重粘稠的粉浆，再将粉浆倒入腌好的肉片中，用手抓拌，让每一片肉片都均匀裹上粉浆。另起一锅烧热水，保持微沸冒小泡的状态，不要大火滚沸，将裹好粉浆的肉片一片片下入水中，沸水会冲掉外层粉浆，小火微煮才能锁住嫩度。下锅之后不要急于搅动，等到肉片变色定型浮起，再捞出备用，这样煮出的滑肉完整嫩滑，不容易碎散。

取砂锅，放入一勺植物油搭配一勺猪油，油热后下葱姜蒜末、小米辣爆香，倒入酸菜不断翻炒，炒出酸菜独有的发酵香气，接着冲入热水，小火焖煮片刻，充分释放酸菜的酸鲜滋味。随后放入金针菇、黄豆芽与豆皮，继续煮五分钟，让配菜吸饱酸香汤汁。依据酸菜本身的咸度，酌情加入盐、胡椒粉、鸡精调味，偏爱更浓郁酸味的，可以滴少许白醋提鲜。最后放入预先煮好的滑肉片，再次煮沸，不要久煮，避免肉质变老，出锅前撒一把葱花点缀。
