暖身开胃，家常酸辣汤藏着餐桌小欢喜

每当胃口不佳，或是秋风渐起身上微凉时，一碗滚烫鲜香的酸辣汤便是最好的慰藉。不同于饭店版本的厚重油腻，这款家庭版酸辣汤食材丰富，做法简单，鲜、酸、辣平衡得恰到好处。汤色红亮，豆腐软嫩，菌菇脆爽，蛋花轻盈，一口热汤滑入喉间，酸辣滋味缓缓散开，唤醒沉睡的味蕾，暖透整个身子。食材随手可得，不需要复杂技巧，在家就能轻松复刻，既是下饭的汤品，也能单独作为一餐轻食。

准备四人份的食材，一颗番茄、一块嫩豆腐、一把金针菇、两个鸡蛋，再备少许木耳、香菇、两根火腿，搭配香菜、小米椒、蒜瓣来增香。调味准备生抽、香醋、胡椒粉、水淀粉、香油、盐与鸡精。先处理全部食材，木耳提前泡发后切成细丝，番茄去皮切小块，豆腐切成细丁，胡萝卜、火腿切丝，香菇切片，金针菇撕成小朵，小米椒切段，蒜瓣切片，所有配菜分门别类摆放整齐，备料齐全才能保证烹饪一气呵成。提前调好一碗料汁，一勺生抽、两勺香醋、半勺白糖、一勺蚝油，撒上少许胡椒粉搅匀，提前兑好料汁，下锅时就不会手忙脚乱。

起锅倒油，油热后下入小米椒与蒜片，小火煸炒激发出浓郁香气，接着放入番茄块，保持小火慢慢翻炒，炒到番茄软烂出沙，倒入适量清水。等到锅中汤水沸腾，把木耳、香菇、金针菇、胡萝卜丝、火腿丝、豆腐丁全部下入锅中，再倒入提前调好的料汁，保持中火继续煮三到五分钟，让各类菌菇与配菜充分吸饱汤汁的味道。等待煮汤的间隙，把两个鸡蛋充分打散，汤煮好后，转小火，缓缓淋入蛋液，静置片刻再轻轻推动，就能形成薄而轻盈的蛋花。随后淋入水淀粉勾芡，边倒边搅拌，将汤汁收至微微浓稠的状态，勾好芡的汤口感顺滑，能牢牢挂住食材。最后撒上切碎的香菜，滴几滴香油，轻轻翻拌均匀就可以关火出锅。
