酸辣宽粉，一口爽滑的烟火小食

食欲不振的时候，最想念一碗酸辣宽粉。晶莹透亮的宽粉裹满红亮的酱汁，入口滑溜溜，劲道弹牙，酸香与辣味在舌尖层层迸发，简单的食材碰撞出十足风味。不用复杂工序，在家十几分钟就能做好，解馋又下饭，不管是当做正餐还是夜宵，都让人吃完一碗还想再来一碗。

备好所需食材，一份宽粉，小米辣、葱花、蒜末各一勺，香菜两根，生抽3勺，陈醋2勺，半勺白糖，盐和鸡精适量，另外准备辣椒粉与白芝麻，用来激香红油酱汁。一碗好吃的酸辣宽粉，灵魂就在于调味汁，酱汁调得好，成品就成功大半。取一个空碗，放入蒜末、葱花、切好的小米辣，撒上辣椒粉和白芝麻，烧一勺滚烫热油，缓缓淋入碗中，热油瞬间激发出辣椒、蒜香与芝麻的香气，香气扑面而来。接着往碗里倒入生抽、陈醋，加入半勺白糖提鲜，再放少许盐和鸡精，充分搅拌均匀，酸甜咸辣平衡的秘制料汁就调制完成。白糖在这里不是增加甜味，而是中和醋的酸涩，让整体味道更加醇厚柔和。

起锅烧水，大火将水烧开，下入宽粉。宽粉煮至完全变软、通透无硬芯即可，煮好之后立刻捞出，过一遍凉白开。这一步是宽粉口感劲道爽滑的关键，过水可以降低粉的温度，避免余温把宽粉焖得软烂发黏，保持Q弹筋道的口感。沥干水分的宽粉装入大碗，放上洗净切段的香菜，再把调好的酸辣酱汁全部淋上去，充分翻拌，让每一根宽粉表面都均匀裹上红亮油润的料汁。
