油豆泡塞肉，看着不起眼，吃起来真香

油豆泡塞肉这道菜，说实话第一次做的时候纯属灵机一动。冰箱里剩了几个油豆泡，又有点肉馅，想着干脆塞进去试试，没想到意外地好吃。油豆泡本身蓬松多孔，吸饱了肉汁之后咬一口直接爆浆，肉馅嫩滑入味，比单纯炒肉馅香太多了。

肉馅还是老规矩，前腿肉三分肥七分瘦，自己剁两刀口感更好。加姜末、葱花、生抽、蚝油、一点盐和白糖，再来勺淀粉，顺着同一个方向搅上劲，最后淋点香油。搅到肉馅发粘、能拉丝的程度，这样塞进去蒸的时候才不会散。油豆泡买那种个头大一点的，用剪刀在侧面剪个小口，手指伸进去轻轻把里面的瓤按一按，腾出空间来塞肉。别塞太满，七八分满就行，蒸的时候肉馅会膨胀，塞太满容易撑破。全部塞好之后码在盘子里，深盘最好，因为蒸的时候会出不少汤汁，别浪费了。

水开之后上锅蒸，大火蒸十五分钟左右就差不多了。蒸好之后盘子里的汤汁千万别倒，那才是精华。把汤汁倒进小锅里，加一点点生抽和水淀粉，煮到微微浓稠，淋回豆泡上面，撒点葱花或者小米辣点缀一下，看着就很有食欲。这道菜最妙的地方在于，油豆泡和肉馅简直是天生一对。豆泡吸了肉汁变得软糯多汁，肉馅又被豆泡的豆香包裹着，吃起来一点都不腻。而且做起来特别省事，塞好往蒸锅里一放，该干嘛干嘛，时间到了端出来就行。

有时候我还会在盘底垫几片白菜或者金针菇，蒸出来蔬菜也吸满了汤汁，比肉还抢手。家里来客人的时候做上一盘，端上桌大家都好奇这是什么，吃一口就停不下来。这种菜说不上多高级，但就是让人觉得踏实。热乎乎地端上桌，一家人围坐着吃，汤汁拌饭，盘底朝天，这就是家常菜最舒服的样子。
