寒露将至，这8样美食记得端上桌，顺应时节滋补，家人健康过秋冬

寒露一过，气温便像坐了滑梯似的往下落，风里都裹着刺骨的凉意，空气干得嘴唇动不动就起皮，连喉咙都时常发紧。老辈人总说“顺时进补，秋收冬藏”，这时候别着急吃大补的厚味，把8样应季家常美食端上桌，润而不燥还养人，全家老小舒舒服服就把秋冬过了。

一、香煎嫩豆腐

食材

老豆腐400g、小葱2根、蒜末3瓣、生抽1勺、蚝油半勺、少许盐、淀粉、清水半碗

做法

1.豆腐切成厚方块，表面薄薄拍一层淀粉，防止煎的时候碎掉。

2.平底锅放少量食用油，中小火，放入豆腐，两面慢慢煎至金黄定型。

3.碗里调酱汁：生抽+蚝油+少许盐+清水搅匀。

4.倒入酱汁，小火焖2分钟入味，开大火收一点点汤汁，撒蒜末、葱花即可出锅。

二、避风塘炒虾

食材：虾、面包糠、葱姜蒜、小米辣、胡椒粉、盐、料酒

1️⃣先处理好虾，去头去虾线，虾开背，可以用剪刀更好操作；

2️⃣虾放适量盐、胡椒粉，加葱姜料酒腌制片刻；加盐是给虾入个底味儿；（后面炒的时候不需要加其他调味料）；

3️⃣起锅烧油炸虾，油需要多一点，最好能大致淹没虾，整个虾身都能炸到，大火炸，待虾变色变熟，再多炸一会儿等虾皮酥脆捞出备用；

4️⃣另起锅放一点点油爆香蒜末葱段小米辣，加入适量面包糠翻炒，放入炸好的虾，快速翻炒均匀出锅。

三、煎蛋白菜豆腐汤

食材:

鸡蛋、白菜、嫩豆腐 、枸杞 。

做法：

1、热锅刷油煎两个荷包蛋，切成小块加适量热水。

2、倒入切好的嫩豆腐，盖盖子煮至汤汁奶白。

3、倒入白菜煮熟，放入泡好的枸杞，加少许盐调味即可。

四、百合银耳清心汤

家常食谱

食材准备：干百合15克、银耳1小朵、麦冬6克、红枣2颗、冰糖适量、清水1000ml

详细做法：

1. 银耳提前冷水泡发1小时，撕成细小碎朵，清洗干净去除杂质；干百合、麦冬洗净备用。
2. 所有食材除冰糖、枸杞外，全部放入锅中，加入足量清水。
3. 大火煮开后转小火慢炖40分钟，炖至银耳出胶、百合软烂。
4. 根据个人口味加入适量冰糖，搅拌融化后，焖5分钟即可饮用。

五、肉桂南瓜炖土豆

所需食材：南瓜400克，土豆300克，肉桂皮1小段，洋葱半个，生姜3片，食盐适量，黑胡椒少许，橄榄油适量，清水适量。

步骤：

1. 南瓜去皮去瓤，切成大小均匀的滚刀块，土豆去皮后也切成与南瓜相近的块状，放入清水中浸泡防止氧化变黑。
2. 洋葱剥去外皮，切成小块，生姜切成薄片，肉桂皮用清水冲洗一下表面浮尘备用。
3. 锅中倒入适量橄榄油，油热后放入洋葱块和姜片，中火翻炒至洋葱变软、边缘微黄。
4. 加入南瓜块和土豆块，转大火翻炒2分钟，让食材表面均匀裹上油脂，激发出香味。
5. 倒入没过食材一半的清水，放入肉桂皮，大火烧开后转中小火，盖上锅盖炖煮15分钟。
6. 待南瓜和土豆能用筷子轻松扎透时，加入食盐和黑胡椒调味，轻轻翻拌均匀，避免把食材搅碎。
7. 继续开盖炖煮3分钟收浓汤汁，取出肉桂皮，盛入碗中即可享用。

六、可乐鸡翅

食材：可乐、鸡翅、生抽、老抽、蚝油、料酒、姜、葱、食用油、熟芝麻

做法：

1. 鸡翅两面划刀，冷水下锅，加葱姜料酒焯水，撇去浮沫捞出，擦干表面水分。
2. 平底锅少油，放入鸡翅煎至两面金黄。加生抽、老抽、蚝油，倒入可乐没过鸡翅，中小火焖煮20分钟。
3. 开大火收浓汤汁，装盘撒上熟芝麻。

香甜不腻，肉质软嫩，是几乎所有小朋友都爱的经典菜。

七、冬瓜薏米排骨汤

配料： 冬瓜400克，薏米50克，排骨400克，姜片3片，盐适量，葱花少许。

做法：

1. 薏米提前浸泡2小时，排骨冷水下锅焯水捞出洗净。
2. 排骨、薏米和姜片放入砂锅，加足量清水，大火烧开后转小火炖40分钟。
3. 冬瓜去皮切厚块放入锅中，继续煮15分钟至冬瓜透明软烂。
4. 加盐调味，撒葱花出锅。汤清味鲜，冬瓜入口即化。

八、青椒炒牛肉

食材：牛里脊 250g、青椒 2 个、生姜 2 片、大蒜 2 瓣

调料：生抽 2 勺、蚝油半勺、淀粉 1 勺、少许盐、食用油

做法：

1、牛肉逆着纹理切成薄片，加 1 勺生抽、淀粉、少许食用油抓匀，腌制 15 分钟，锁住肉汁。

2、青椒去籽切小块，姜蒜切片备用。

3、热锅多放一点油，下入牛肉大火快速滑炒，肉片变色立刻盛出，不要炒老。

4、留底油爆香姜蒜，放入青椒翻炒至微微断生，加少许盐。
