家常排骨汤最简单做法，难道不想让汤白肉嫩还不油腻吗？这样做给全家喝，保证谁都爱喝

我家每到秋冬换季，锅里就得咕嘟起来。前两天我爸在屋里说了一句，我这把老骨头就爱喝那口热汤。正好我回家路上买了排骨，拎到厨房先给他俩孙子盛了碗，俩孩子喝得直点头。看着汤面那层奶白色的汤油光，我媳妇笑着说你这排骨汤不像家里做的，倒像饭店现炖。其实关键就几步，少一步都不行。

很多人做排骨汤，最大问题不是火候不够，是腥味和汤色。要么味道有腥，汤黑得像隔夜的酱油水；要么就清得发寡，肉软但不香，喝两口就想配馒头干嚼。排骨汤这东西，不是靠加料堆出来的，是靠处理血水、温度顺序、翻滚时间把鲜味逼出来。你把流程按住了，新手也能一次成，家里人还愿意一碗一碗喝。

第一关是泡水和焯水。排骨买回来别急着下锅，我一般先把排骨剁成小段，冷水浸泡20分钟。泡的这20分钟不是闲着，血水和里面的杂质会慢慢出来，腥味就少一大半。人讲究一顺气，我做饭也讲究一顺序，先泡再焯，后面才有奶白汤色的底子。

焯水的时候用冷水下锅，姜片和少许料酒跟上。等水烧开以后把浮沫撇干净。很多人图省事，嫌麻烦就热水下排骨，结果往往是腥味更顽固，肉还容易发柴。热水下锅像把肉突然“闷”住，表层快速收缩，里面的血水和杂质来不及处理，最后就容易腥和柴同时出现。山东人做菜讲究实在，别拿肉当实验品，这一步就要按冷水开焯的路子来。

第二关是冲洗和加水温度。焯好水的排骨别直接乱丢，温水冲洗一下更省事也更稳。冲洗的目的是把表面残留的浮沫和油脂洗掉一点，保证汤更清更白。沥干水分以后再下砂锅。

很多人这里会踩坑，直接加冷水煲。你会发现汤不白，肉也更容易发柴，原因在于温度变化会让肉质收缩变紧。排骨刚刚焯过，骨肉组织还没完全稳定，你再用冷水猛一激，鲜味不容易被拉出来，口感也会变硬。要做出那种饭店级别的顺滑感，就得把温度接起来。

我做排骨汤一般用足量开水入锅。先放姜片、葱段，再看口味加点配菜。想清甜一些可以放两段玉米，胡萝卜几块也行。玉米的甜能把油腻感压下去，胡萝卜的清也能让汤更舒服。配菜不是越多越好，是要能配合排骨本身的香。家里有老人孩子，汤里多点清甜，喝起来不顶，吃完胃也不闹。

第三关是翻滚和时间。大火煮沸十分钟，这一步是汤色奶白的关键。你看着锅里从小泡到翻滚，油脂和蛋白质在高温下更容易乳化融合，汤就会从清汤变成奶白色。很多人觉得一直大火不省事，我也明白，但排骨汤就是需要这十分钟把底色做出来。你要是火太小，连翻滚都不明显，汤就不容易浓起来。
