2 | Taste a Basket of Authentic Nanxiang Xiaolongbao

For visitors to Shanghai, Yu Garden is a must-see. Built during the Ming Dynasty, this ancient garden has witnessed countless moments of exchange between China and the wider world.
It is also home to many Chinese delicacies, making for a memorable journey through culinary intangible cultural heritage.
Xiaolongbao (soup dumplings) can be seen everywhere on the streets of Shanghai, but knowledgeable diners mostly choose the Nanxiang Mantou Store by the Zigzag Bridge in Yu Garden.
The traditional craft behind Nanxiang xiaolongbao has been passed down through seven generations over more than a century. In the open kitchen, pastry chefs work with wrappers about 1.5 millimeters thick and weighing around 9 grams. They add precisely 21 grams of filling, then pinch 16 even pleats in swift, practiced motions.
There are also more and more choices for fillings. Traditional fresh pork, signature crab roe and fresh pork, spicy crab meat, wild vegetables and fresh mushrooms... You can choose from more than ten flavors.
Through generations of dedication and innovation, the century-old shop has also won acclaim from the Michelin Guide: Yu Garden's Nanxiang Mantou Store has repeatedly received a Bib Gourmand distinction in Shanghai.

Making xiaolongbao tests a pastry chef's precision at every step, from kneading and rolling the dough to preparing the filling and pleating the wrapper. The wrapper must be thin and translucent yet strong enough to hold the broth; the pleats must be fine and even, and the top tightly sealed. This skill with the hands echoes the precision and consistency that WorldSkills competitors pursue in the arena.
Local diners have passed down a saying for how to eat them: “Lift gently, move slowly, make a small opening, then sip the soup.” Pick up a dumpling by the top with your chopsticks, dip it in vinegar with shredded ginger, bite a small opening in the wrapper, and slowly sip the hot broth before eating the filling and wrapper together.
This is more than a food stop: it is a conversation about skill that needs no translation.
