广元凉面并非传统意义上的“凉”面或“面”，而是一种用大米制成的热食米皮，当地人称之为“蒸凉面”或“热凉面。它以优质籼米为原料，经过泡米、磨浆、蒸制、切条等工序制成，口感软糯滑爽，带有独特米香。

其风味核心在于红油调料，辣而不燥、香气浓郁，搭配爽脆豆芽、蒜水、酱油等拌匀，形成酸、甜、麻、辣、香五味交融的丰富层次。虽然名为“凉面”，但通常是趁热食用，兼具温润与清凉的矛盾口感，极具地方特色。

2.剑门豆腐宴

剑门豆腐选用本地砾岩油沙土种植的小黄豆和剑泉水制作，质地洁白细腻、韧性十足，口感滑嫩清香，素有“白、细、韧、香”之称。通过炒、炸、蒸、炖、凉拌等多种工艺，可变幻出280至500余种菜品，形成一桌琳琅满目的豆腐盛宴。
