一、莆田卤面

来莆田必吃的头号美食，绝对非莆田卤面莫属，也是莆田宴席、家宴上必不可少的一道硬菜。和外地清汤面条完全不同，莆田卤面主打浓稠鲜香的海鲜卤汤底，用料格外实在。

面条筋道软糯，汤底加入海蛎、虾仁、蛏子、干贝等多种新鲜海鲜吊鲜，再搭配瘦肉、香菇、青菜一同焖煮，汤汁浓稠挂面，每一根面条都牢牢裹满鲜香汤汁。入口鲜而不腥，温润醇厚，海鲜的鲜甜彻底融入面汤之中，暖胃又解馋，不管是早餐还是正餐吃都再合适不过，是刻在莆田人味蕾里的本命面食。

二、麦煎

麦煎是莆田家家户户都会做的家常甜口小吃，满满都是童年和家乡的回忆。做法简单却无比治愈，用小麦粉加水调制成顺滑面糊，平底锅少油慢煎，煎至两面金黄微焦即可出锅。

刚出锅的麦煎香气扑鼻，外皮微微焦脆，内里绵软湿润，自带小麦本身的清甜香气，无需多余馅料就足够好吃。小时候每逢家里农忙、逢年过节，长辈都会煎上一锅麦煎，热气腾腾的面饼，朴实香甜的口感，没有花哨配料，简简单单，就是最治愈人心的家常烟火味。

三、西天尾扁食

提起莆田扁食，一定要吃正宗西天尾扁食，也是莆田扁食界的天花板，最大的特色就是以肉做皮，以肉包肉。不同于普通馄饨的面皮，西天尾扁食的燕皮纯手工捶打而成，选用新鲜猪肉搭配木薯粉，经过千百次反复捶打，面皮薄如蝉翼，通透又筋道。

内馅选用新鲜猪前腿肉，搭配提鲜虾皮手工剁馅，肉质紧实弹牙。下锅煮熟之后，扁食软嫩不破皮，一口咬下，皮薄肉嫩，汤汁清鲜，口感层次十足。纯手工匠心制作，吃得出实打实的用料，一口一个根本停不下来。

四、莆田煎包

莆田人的早餐灵魂，离不开外皮酥脆、内里爆汁的莆田煎包。它和北方水煎包、上海生煎包口感完全不同，有着独属于莆田的特色风味。

煎包底部经过油煎，焦香酥脆，上部面皮松软有嚼劲，内馅填满新鲜猪肉、包菜等馅料，汁水饱满。吃煎包讲究趁热入口，刚出锅的时候口感最佳，轻轻咬开酥脆外皮，滚烫鲜美的肉汁瞬间在口中迸发，鲜香不腻。大街小巷的早餐店都能见到它的身影，是陪伴无数莆田人长大的早餐标配。

五、莆田泗粉

泗粉是莆田独有的特色粉类小吃，也是无数在外莆田人念念不忘的乡愁美食。原料只用纯天然地瓜粉制作，无多余添加剂，工艺传统地道。

做好的泗粉质地顺滑软糯，晶莹剔透，吸汁能力极强。不管是做成清汤泗粉，还是搭配卤肉、海鲜、青菜炒制，都十分入味。顺滑的粉条裹满浓郁汤汁，入口软滑爽口，自带地瓜独有的清香，口感软糯却不会糊烂，朴素又地道，一口就能梦回家乡。
