首先准备几根香菜,去掉根部,放入淡盐水中,给它清洗干净,之后给它改刀切成香菜末,切好以后放入大碗中,再准备半根大葱切一点绿葱花,切好以后也放入香菜末的大碗中。
之后呢就是调底味,在香菜末的大碗中依次加入食用盐,生抽,少许的香油,胡椒粉,香醋,最后再加入一点虾米备用(喜欢吃辣的朋友,可多放点辣椒粉或再淋上些油泼辣子;嗜酸的朋友,适当增加陈醋用量)。
锅中烧入一锅开水,水快开的时候在里面打入一个荷包蛋,然后水完全开透以后荷包蛋定型,放入鲜面条(挂面煮的时间稍长些,按包装说明操作),用筷子轻轻搅拌,防止粘连,煮1 - 2分钟后,舀入适量面汤放入香菜末碗中,这个酸汤汁就调好了,将煮好的面条捞出,过一下凉水在放入酸汤汁碗中,(因为夏天,天气太热过,面条过一下凉再放入调好的汤汁吃起来更爽口,冬天可省略此操作)在放入煮熟的荷包蛋,一碗美味的酸汤面就大功告成啦!
