接下来我们把锅烧热,加入清水,水量没过芋头丝就行,然后开大火烧开,水开以后呢,往里面加入一勺盐,增加底味,再倒入泡好的芋头丝,快速的搅拌均匀,使芋头丝受热均匀,这样呢,可以让芋头丝变得更加的爽脆。
等芋头丝煮至断生,表面微微透明的时候就可以捞出控水了。捞出来以后呢,一定要多攥几下水分,因为芋头丝含有大量的淀粉,不攥干水分的话,炸出来的芋头条就会非常的黏稠。
攥好水分的芋头条呢,咱们放在盘子里摊开散热,然后再撒上一些干面粉,用筷子给它搅散,防止粘连。
下面呢,我们来炸芋头条,锅中呢倒油,油温五成热时,也就是筷子伸入油锅能迅速冒小泡泡的时候,把芋头条放入锅中,用漏勺不停的翻动,让芋头条受热更加均匀,等芋头条变成金黄色就可以了,捞出来控油装盘。
最后呢,在上面淋上提前调好的料汁,一碗外酥里糯,吃起来嘎嘎香的炸芋头丝就做好啦!
