那今天我就来教大家在家做这个长沙三拼粉,不用点外卖就能吃到美味的家乡味了!
首先准备食材:猪脚 3 只,卤蛋 20 个,肠子 500 克,鸭血 500 克,肥肠 500 克,牛筋 500 克,鸡胗 500 克,葱姜蒜、八角、香叶、干辣椒、花椒、小茴香等调料适量。
然后开始制作。把猪脚焯水去腥后,放入高压锅中,加入清水、料酒和各种调料,大火烧开,转小火慢炖一个小时。炖好的猪脚捞出放凉备用。
接下来准备一个大盆,在里面倒入料汁。料汁的比例为:生抽 3 汤勺、老抽半汤勺、蚝油半汤勺、白糖两茶勺、醋两汤勺、红油辣椒一汤勺、熟白芝麻一小撮、辣椒粉两大汤勺,搅拌均匀备用。
将卤蛋煮熟剥壳,肠子切片,鸭血切块,肥肠切段,牛筋切条,鸡胗切片备用。
炒锅中加入食用油,先下入花椒和干辣椒爆香,再下入葱姜蒜炒出香味,接着依次加入所有配菜翻炒均匀,最后淋上调好的料汁,再次翻炒均匀即可出锅装盘。
这个时候就可以起锅烧水煮粉丝了,水开下入粉丝,煮至断生捞出沥干水分。
