这个糯米糕呢,是用糯米粉加糖做的,所以它吃起来就是甜甜糯糯的口感。今天我就来教大家做一个简单又好吃的糯米糕,不用蒸锅就能做出来,特别适合新手小白。
首先准备一个大碗,在里面加入 300 克的糯米粉,100 克的白糖,然后加入 240 毫升的温水。注意啊,温水不能太烫,会把酵母给烫死。

接着呢,搅拌均匀,再撒入一点干面粉,这样可以防止起疙瘩。全部搅拌好之后呢,就可以盖上保鲜膜发酵了。发酵时间大约需要一个小时左右。
这个时候我们可以来做红豆沙馅料,准备好 200 克的红豆,提前浸泡一晚上。泡好的红豆清洗干净,放入锅中,加入两倍的清水,大火煮开后转小火煮至软烂。煮熟的红豆放凉以后,用勺子压成泥备用。

接下来我们看一下面糊的情况,已经发酵好了。发好的面糊是呈蜂窝状的,并且比之前膨胀了很多。如果发酵的时间不够长的话,它就不会发酵成功。
将发酵好的面糊倒入筛网当中过滤一下,去除里面的颗粒杂质,这样做出来的糯米糕更加细腻可口。过滤好的面糊呢,再次倒回碗中,然后加入 5 克的食用碱面,用筷子搅拌均匀。如果没有食用碱面的话,可以用小苏打代替,但是用量要减半。

最后呢,将调制好的面糊倒在模具当中,表面铺上一层红豆沙,然后再在上面撒一些黑芝麻点缀一下。烤箱预热 170 度,中下层烘烤 30 分钟即可。
出炉后的糯米糕,外皮焦脆,内里柔软,而且层次分明,咬上一口,满嘴都是红豆沙的香味,非常的好吃。
