制作步骤:
1.把螺蛳粉里的干米粉用冷水浸泡至少1小时,泡到米粉微软。然后烧一锅开水,把泡好的米粉放进去煮,煮8-10分钟,用筷子能夹断,但中间还有一点点硬芯的状态,是最好的。捞出后,立刻用凉水冲洗几遍,沥干水分。
2.大蒜切末,小米辣切圈,小葱切葱花。鸡蛋打散后,炒成鸡蛋碎。午餐肉半根切丁,蔬菜洗净、切段。
3.螺蛳粉料包里的酸笋、木耳豆角等干料拆开,酸笋如果太大块,稍微切小一点。找个小碗,把螺蛳粉包装里的辣椒油包、醋包、螺蛳汤料包、酱包挤进去,加半汤匙蚝油和一茶匙生抽,搅拌均匀。
4.锅中倒入两汤匙食用油,烧至七成热,放入蒜末、小米辣圈,爆炒出香味。酸笋和木耳豆角干料倒进去,快速翻炒1分钟,把酸笋的香味彻底激发出来!
5.处理好的米粉倒入锅中,用筷子快速划散,均匀受热。火腿丁、鸡蛋碎、蔬菜一起放进去,酱汁也均匀地淋在米粉上。
6.调大火,用锅铲快速翻炒,让每一根米粉都均匀地裹上酱汁,颜色变得油亮诱人。炒到你觉得米粉已经充分入味,蔬菜也断生了,就可以准备出锅了。出锅前,撒上螺蛳粉包装里的炸腐竹和香脆花生米,再撒上一把葱花,稍微拌匀,即可关火。
