猪里脊肉:300克
鸡蛋黄:1个
玉米淀粉:100-150克
腌料:
料酒1大勺
生抽1大勺
盐一小撮
白胡椒粉少许
料汁:
白醋:3大勺
白糖:2大勺
生抽:1大勺
玉米淀粉:1小勺
清水:2大勺
配菜:
青椒半个
红椒半个
胡萝卜小半根
葱段
姜片

制作步骤:
1.猪里脊肉切成1.5厘米厚的片,再改刀切成小拇指粗细的肉块。切好后放入碗中,加入料酒1大勺、生抽1大勺、盐1小撮、白胡椒粉少许,抓拌均匀,腌制15-20分钟.
2.腌好的肉段里,打入1个鸡蛋黄,用手充分抓匀,让每块肉都裹上蛋黄液。分次加入玉米淀粉,一边加一边用手抓拌。让每一块肉段都均匀地裹上一层干爽的淀粉,抖一抖掉下多余的干粉。
3.锅中倒入足量的食用油,开中火烧热。裹好粉的肉段分批下入锅中,用筷子轻轻拨散,防粘连。保持中小火,慢慢炸3-4分钟,炸到肉段表面微黄,外壳基本定型,就可以捞出来,控一控油。
4.锅里的油继续加热,油面开始微微冒青烟,肉段再次全部倒入锅中,转大火,快速复炸1分钟。到肉段颜色迅速变成诱人的金黄色,外壳变得更加坚挺。赶紧用漏勺捞出来,大力控油!
5.青红椒、胡萝卜都切成漂亮的菱形片或者小块,在一个小碗里,把白醋3大勺、白糖2大勺、生抽1大勺、玉米淀粉1小勺、清水2大勺,混合在一起,用筷子搅拌均匀,直到淀粉完全化开没有疙瘩。
6.锅里留一点点底油,烧热后放入葱段、姜片、蒜末,爆出香味。香味出来后,倒入切好的青红椒片和胡萝卜片,开大火快速翻炒几下,炒到断生。料汁再次搅匀,沿着锅边淋入锅中。快速搅动,汤汁很快就变得浓稠,咕嘟咕嘟冒起漂亮的泡泡。
7.芡汁变得浓稠透亮,金黄酥脆的肉段倒回锅中!快速翻炒者颠锅,让每一块肉段都均匀地裹上酸甜可口的酱汁。看到芡汁均匀挂上,肉段油光锃亮,就可以关火,盛盘啦!
