准备一条新鲜的鲈鱼,清洗干净后,在两侧各切三刀,方便入味。在鱼身上拍上一层薄薄的玉米淀粉。

锅中倒入多一点的油,把鱼放进去,小火慢煎至两面金黄即可出锅备用。
另起一锅,加入少许底油,放入姜片、蒜瓣爆香,再倒入生抽、老抽、蚝油、料酒、白糖、醋,大火熬煮出香味。
接着加入没过鱼身的热水,大火烧开后转中小火炖煮 10 分钟,让鱼肉充分吸收汤汁的味道。

10 分钟后,将鱼放入锅中,轻轻翻动一下,让鱼均匀裹上调好的酱汁,再盖上盖子继续炖煮 10 分钟。
