蓝莓慕斯巴斯克的做法
- 巴斯克用的奶油奶酪室温放至软化(嫌太慢了可以底下放盆热水)
- 加入糖,搅拌均匀
- 糖搅拌后的质地
- 分三次加入放置常温的蛋液
- 鸡蛋搅匀后的状态
- 分三次加入放置常温的淡奶油
- 淡奶油搅匀后的状态
- 过筛加入低粉
- 全部混合均匀后过筛倒入模具中
- 烤箱预热后,上下火,放至中下层,220度25分钟,最后几分钟根据上色情况加盖锡纸
- 巴斯克放置一旁等放凉,来做慕斯
- 慕斯用奶油奶酪加入砂糖搅拌均匀
- 淡奶油打发至浓稠酸奶状,加入到奶油奶酪里,加入果酱搅拌均匀
嫌麻烦也可以直接不打发,常温直接倒进去,就是质地会稀一点
- 吉利丁片(泡凉水)软化
- 牛奶混合吉利丁片,混合均匀后加入慕斯糊中
- 慕斯糊倒进巴斯克顶部,冰箱冷藏4小时以上
- 在顶部涂一层蓝莓果酱,放上蓝莓,可以撒一点糖粉更好看,看个人喜好自由装饰
