岩烧芝士蛋糕『简单美味0失败』的做法
- 制作一个6寸戚风蛋糕,可以按这个菜谱,过程写的非常详细了。也可以制作其他蛋糕,古早蛋糕、芝士蛋糕、海绵蛋糕都可以
- 戚风开裂没问题‼️脱模倒扣后顶面一定要平整,防止芝士糊涂后烤制过程中会流淌。
- 准备菜谱,切达芝士片2片大约25g,品牌不限。炼乳蜂蜜都没有就等量细砂糖替代!
- 将牛奶、淡奶油、黄油、砂糖、炼乳/蜂蜜、材料依次称量倒入一个可微波炉加热的容器内。不爱吃甜的可以减少糖量。
- 微波炉中火加热1分钟,刮刀翻拌一下再叮1分钟,拿出来大致这样,用刮刀抄起底部观察,必须要确认芝士片完全融化!!最后用刮刀搅拌均匀变成顺滑的芝士糊。(也可以不粘锅内明火加热至芝士糊融化变浓稠时关火,明火加热的芝士糊稍稍冷却就可涂抹了,不需要冷藏)
- 拌匀后的芝士糊室温冷却后放入冰箱冷藏,待完全冷却后变浓稠了再涂,我拍了下冷却后的这个浓稠的状态,可以涂更厚。 https://mip.mzppcfp.com

芝士糊可以前一晚花五分钟做好,冷藏过夜,第二天直接拿出来用,非常方便!(不冷却直接涂抹芝士糊也可以,分几次涂抹,芝士糊尽可能厚,也可烤出奶皮效果。)
- 涂上厚厚一层芝士糊,撒上杏仁片,看着很像爆浆海盐奶盖蛋糕。
- 烤箱预热,中层上下火200/180度,烤大约十分钟。烤时不断鼓起大气泡的这个状态是对的。(岩烧乳酪戚风视频忘拍了,用的岩烧乳酪吐司)
- 刚出炉看着像焦了!绝对没有,放凉后见证奇迹的时刻!太诱人了
- 切一块尝下满满芝士味,超赞!
- 厚厚一层奶皮层
