双椒小煎鸡
1.鸡腿切不太大的小块,洗净冷水入锅,煮沸煮出浮沫后捞出用温水洗净沥干备用;
2.锅中倒入比平时炒菜略多一点点的油,下姜片煸出香味后下入鸡块;
3.将鸡块在油中快速翻炒,后加入料酒;
4.鸡肉本身的油脂也出了一部分后加入葱、蒜、洋葱和青花椒;
5.依次加入酱油和蚝油调味,最后视酱油和蚝油的咸度补适量的盐;
6.加入杭椒段翻炒均匀至微断生即可出锅。
