盐水老豆腐煲
做法:1、老豆腐加水过面,放入蒸柜大火蒸半个小时,让其膨松出味,及蒸出盐卤水;
2、取出豆腐,冷却后掰成块,留下盐卤水备用;另将所有海鲜食材焯水备用;
3、热锅下菜籽油,加入葱、姜煸炒香后,加入高汤、料酒,以及所有食材,再倒入10克盐卤水,加盐、胡椒粉调味后,大火煮至汤汁浓稠即可。
